is it possible to bring 2 seperate accounts together (i.e. music, pics, podcasts) se we can homeshare without losing the information either 1 or both of us have?

I'm sure you know that when you sync your iPhone to your computer, it automatically replaces the songs on your iPhone with the ones on your computer. It is important to sync your purchases to your computer on a regular basis, so that if you do lose them from your iPhone, they will be on your computer's hard drive and you will be able to retrieve them, if needed, the next time you sync. Purchases made on your device are not automatically saved to your computer. Your device has to be physically plugged in after purchasing.
Since it automatically replaces the songs on your iPhone with the ones on your computer, this could effectively erase any songs downloaded on your iPhone that haven't been backed up. I highly recommend checking out this article for future transfers:

Home sharing only allows you to stream content from a computer's iTunes to an iOS device or another computer (and to copy from the computer to another computer), you can't use it to copy items to an iOS device.
If the apps are still in your country's store then you should be able to redownload them on your iPad via the Purchased tab in the App Store app on it, and for music (if you are in a country where music purchases can be redownloaded and they are still in the store) then you can redownload them via the Purchased tab in the iTunes store app on your iPad. Or you can copy them from your iPod to your computer's iTunes library by connecting it and using the File > Devices > Transfer Purchases menu option and then sync them to your iPad.

Updating will not cause you to lose data but things can always go wrong. You should definitely backup before you update. I assume you have music on the device that was not purchased in iTunes and synced with a different iTunes library. You can transfer these songs back to your computer with third party software such as TouchCopy.

I am not good with technology and easily confused! I have an old IPOD that is full with about 2000 of my songs. We have moved overseas and I use my partners computer. He has Itunes installed with all his IPOD details on it.

One solution is to copy all the music currently on your iPod to your partner's computer and then restore the ipod through iTunes and resync all the old music back to it as well as the new music. This way, you can update the ipod with new songs and play counts and such.
You could even create an entire new empty library for just your Tunes on his computer. Instructions on how to do this can be found in this Apple support document, which actually provides several methods on how to manage multiple iPods with one computer.

As to how to copy music from your iPod to the computer, there are several ways you can accomplish this. You should be able to see two different tabs when setting up the email if you go to Other > Add Mail Account. Once you enter in the email address and password, you should be at the next screen to provide more details about the email as far as incoming and outgoing servers and at the top there will be a blue section to add it in as a POP or IMAP email account. Sorry I cannot follow why you would even use the PC to control the Time Capsule. Apple have not kept the Windows version of the utility up to date.. so they keep making it harder and harder to run windows with apple routers.
