What are Notes?

When I started up my iPod Touch, there was an application, Notes. I noted that and went on with what I was primarily concerned with at the time, loading and playing music, etc. loaded from iTunes. It was only later that I started using the "Apps."
My primary computer/net interface is my computer. I only use my iPod for music or occasionally when I travel.
On my computer, there is an option to Synch "Notes", via MobileMe. I have no such application on my MacPro and when I went to the Apple site and downloaded a "Note" application, it doesn't look like the one on my iPod.
I'm confused.

Notes are part of your Mac's Mail Application. You'll find them under Reminders in the left sidebar.
You have the option under each account's preferences to also display notes in each inbox.
Open Mail's Help file, go to the index and select "Notes" to learn how to deal with Notes in Mail.
