What audio format does iTunes convert to and use?

I got an ipod touch 4 a few months back, and it had to convert many of my songs to a different format. I need to put some songs on a rewritable cd/dvd to work in a cd player. I think it is an MP4 format. We tried it on a rewritable DVD-RW and a CD-R. Neither work. We tried on two different cd players. They act as if nothing was there. I need to know if Mp4 format is the problem and if iTunes can convert it to the right format. I can't find what format it converted my other songs to. Thanks for suggestions!

iTunes does not convert the audio format unless you ask it to, either by ripping from an audio CD or using the conversion process.  (In iTunes for Windows it also does a conversion when a WMA file is added.) Other than that, it leaves files in the audio format they are in.
When it does convert, it uses the format that you have selected in the "Import Preferences."  That value defaults to AAC, but also allows selection of MP3,  Apple Lossless, WAV, or AIFF.

    iTunes uses Quicktime for audio playback and plays Apple Lossless, WAV, AIFF, MP3 and AAC files. If you want to play other formats, you generally have to convert them to a format iTunes supports (I use Apple Lossless myself). iTunes to FLAC is a group of Applescripts enabling FLAC file conversion in iTunes.     iTunes 11 can currently read, write and convert between MP3, AIFF, WAV, MPEG-4, AAC and Apple Lossless (.m4a).
    iTunes can also play any audio files that QuickTime can play (as well as some video formats), including Protected AAC files from the iTunes Store and Audible.com audio books. There is limited support for Vorbis and FLAC enclosed in an Ogg container (files using the Ogg container format are not natively supported) or Speex codecs with the Xiph QuickTime Components. Because tag editing and album art is done within iTunes and not QuickTime, these features will not work with these QuickTime components. As of Snow Leopard, iTunes 9 (Mac) will play HE-AAC / AAC+ internet streams.     iMovie is flexible.
    The video and DVD standard is 48khz, so so if your camcorder has multiple audio settings, choose 48khz.
    CDs and itunes tracks are in 44.1khz, and these can be used in iMovie projects.
    I have never tried 96khz. I don't have any equipment that records at that rate.
    As for bit depth, I am pretty sure it will accept both 16 and 24.  There is no way to set this parameter in iMovie.
    If you do live recording into Logic Pro, you can use 24 bit depth, and then mix that into a 48khz or 44.1khz recording in AIFf, AAC, Mp3, etc. and use that in iMovie. I am not sure about GarageBand.

    I'm still uploading my library. I've gotten to my compilation albums. These are old. Like, 15 years old. The track reads album/song name/artist/year. When I import these the title stays the same; iTunes isn't sorting the information into its different fields. Since Sony's Walkman did, I'm guessing that the tags that iTunes can read is different.
    I did a search for tag converters and found a whole bunch of stuff but I'm apprehensive about downloading something without knowing its reputation. Can someone suggest a tag converter or at the very least tell me which tag to convert to (so I make a better formed decision).

    For MP3 files, iTunes writes tags in ID3v2.2 using UCS-2 encoding by default, but converting them to ID3v2.3 (UCS-2 encoding) and ID3v2.4 (which uses UTF-8 encoding) is possible via its "Advanced" > "Convert ID3 Tags" toolbar menu. If both ID3v2.x and ID3v1.x tags are in a file, iTunes ignores the ID3v1.x tags.
    I've used both ID3v2.2 and 2.3 and they both work.
    I've just switched from PC (Windows) to Mac so I haven't yet tested any mp3 tag editors.
    My advice is for you to test one or two to see how they work.

    Thanks for the help, but my question is still unanswered, I want to know how to associate different file types with iTunes, maybe I am not asking the question correctly, or don't know the terminology. I know that my real player can be made to associate different file types from the tools menu, I check off the boxes with the different extensions, like, .mp3, wav, midi, .ogg, etc... I thought there was a feature like this on iTunes, but I can't find it, is it only available when I install it?

    I think if you pull up the movie in the iTunes store it should tell you. For example, I pulled up the Star Trek movie that came out a few months ago, and it reports "Dolby Digital 5.1 surround sound". Clearly you need to make sure that your hardware supports whatever sound configuration the movie employs.

    No they don't get converted. Whatever the files/bitrates are that are imported into into iTunes are the same as get transferred to the iPod.

    I think it leaves it as-is if you burn as an mp3 or data disc. As an audio cd I believe it converts them to audio cd standards.

    Import the CDs to iTunes one at a time, following these instructions.
    Once the tracks are in your iTunes library, put them into a playlist, and get them into the order you want.  Or if you by "scramble" you mean a randomly shuffled order, use the crossing arrows at the lower left to do so.
    When you are ready, insert a blank CD, use the command File > Burn Playlist to Disc, and create an audio CD.  I strongly suggest using CD-Rs rather than CD-RWs, since the latter often have trouble in normal CD players.
