What is the best way to backup photos, etc. in case of theft, fire or flood?

I have 2 time capsules on 2 iMacs and want to occasionally backup on something, in addition to the time capsules, that I can keep in a small fireproof safe. Time capsule says a full backup requires 150 GB on one computer and 900 GB on the other.  I don't care so much about applications, so I'm guessing that could be a lot lower.

It is wise to research this field carefully. My early CDs were useless after 5 years but I have yet to discover any difficulties with my Verbatim DVD +R.
The 2007 NIST/Library of Congress Optical Disc Longevity Study implies about a 50 year life for DVD R:

Here are a few of my random thoughts:
1 - Safest, but not practical, media - punched lead (Pb) tape
2 - Do automated verification read after writing
3 - Keep all critical data on more than one type of media located in more than one place
4 - Infrequently used backup hard disks can be expected to have a much longer life than frequently used disks
5 - In general lower density hard disks are more reliable
6 - In general server grade disks are more reliable than desktop disks
7 - 5 inch desktop disks are more reliable than 3 inch laptop disks
8 - 10 year old disks less than 60 GB with proper MTBF specifications may outlast most more recent disks
9 - Compression or any type of security coding will reduce the likelihood of recovery

So you can share apps and music amongst your users on your computer and with their devices. You just can't give any of that content to friends or relatives who don't live with you.
    What I am not clear on, it making sure that this appears in each itunes account - is it easy to find the file storage folders that match the itunes accounts and what would these be?
    The iTunes library and files are by default in a user's Home/Music folder. But you don't have to find the folder; in fact putting a file into the folder yourself won't add the file to iTunes. Just drag the file into the iTunes window. iTunes will copy it to the correct location.

    If dfs01 and dfs02 have good channel width that use DPM to only protect a single “copy” of the data located on a server-specific local path.

    No need. Web galleries are built into Aperture 3. Put the images you want to be in the gallery in one Album (Smart or otherwise). Select all the images. Click "New→Web Page". Select a theme. Change some of the text. Make some other changes. Click "Export Web Pages ... ". Make some more decisions. Give the folder a name. Save it somewhere with access to those whom you wish to see it. Select "Tell me when done". Check your email (have a coffee). Click "Show in Finder". Open the folder. Double-click the file "index.html". Brilliant! Enjoy.
    The trick to sharing this is to make the folder available. The index file will always open the web site pages in a web browser.

    If you only need to transfer photos, connect the two Macs to the same network. Enable file sharing on both, and copy the iPhoto folder from your old Mac to the new one. Put it in your Pictures folder. This assumes you have no photos on your new MacBook Pro you wish to keep. If you do then let me know.
    The first time you launch the new version of iPhoto with a Library created by an older version, it will most likely want to "upgrade your iPhoto Library". This is normal.

    With so many cloud based and wireless syncing services, I'm lost as to the simplest way to keep photos sync'd as well as backed up. My dropbox is currently syncing all photos I take with my iphone, but in an overall folder called CAMERA UPLOADS, so they are uncategorized. I upload pics to facebook, which facebook also has a sync photos feature, but I don't necessarily want all photos uploaded to facebook. What has worked best for everyone so that there aren't a ton of dupicate photos everywhere, and multiple syncs of the same photos?
    Also, what is the best way to manage my iPhone photos generally? I'm never sure if I delete a photo from my phone, does it delete it on my computer via iCloud? Sometimes I just take a picture to send to a friend that I don't need to keep, while others are ones I want to sync to my computer. Can I control when deleting that it be deleted everywhere or just on the device? And alternately, can I choose certain photos not to sync via iCloud?
    iCloud makes me nervous. Once when I wanted to place all photos of my pup into a folder, I selected the photos on my iPhone and accidentally clicked delete instead of move. No big deal, I figured they'd be at home sync'd on the cloud. But since I'd deleted them on my phone, the cloud deleted them on my home computer too and the photos were lost.

    There is a direct option in Organizer which lets you import from iPhoto. This is under Import dropdown menu in left panel.
    If you are importing from iPhoto'09, your Tags, Albums Events, captions, star rating would also get imported apart from your media. This works differently for iPhoto'011 where you can get only the media to the Organizer,
    Just a couple of things to know:
    1. If in iPhoto preferences, you have chosen to create copies of your photos in iPhoto library and your library hence refers to the media store inside the library package, then on importing from iPhoto, Organizer would create copies of all those media under your pictures folder. That means, it would not corrupt your iPhoto package or modify it in any way.
    2. However, if in iPhoto, you are organizing by using references to original location on your Hard drive i.e. you are not creating copies of media in iPhoto library then on importing from iPhoto to Organizer, the Organizer would also use the same references and would not create copies of the media.

Am I missing other important folders to drag along to the external HD in order for both the Address Book folders to be the same in my internal and external HD?

    It would copy the information into a single file... The same as if you wanted to share your contacts with someone else-you could email the vCard to them, they would import it and have the all the same contact information imported into their address book.
    For your own use, it's pretty much the same and works through the File>Import>vCards option in AddressBook.
