What is the difference between IPad mini& ipod Touch?

An iPad mini (2nd generation) is, in essence, a scaled down iPad Air. It features a 7.9 inch Retina display with the latest chipset (the A7), which is the fastest for any iOS devices out there. The iPod touch is an iPhone 5c without the phone; it comes in colors, but has a slower chip (A5 chip, found in the iPone 4S, iPad 2). Performance wise, the iPad mini will run smoother.

You can see the model number in Settings>General>About>Model. The model number has a two-letter code, a number and some more letters. The last part stands for the country/region. The first letter can be "F" (refurbished), "M" (normal retail), or "P" (personalized / engraved). For example MC605B is the model MC605 and B is for the region.

Doing a side by side review of the specs, the hardware and operating systems are the same, but there is a minor difference in the bundled software.
The 3000sa has the HP Coolsense software, but does not come with Windows Live Essentials, which is included in the 3025sa (you can download that for free from MS anyway).
The 3025sa does not come with the HP Coolsense software, but comes with Windows Live Essentials.

The iPod shuffle, is substantially different from other iPod models. I was going to buy an ipad 3 o macbook pro but Im not sure if I should send extra and get a macbook pro or get and ipad 3 which does just about everything I want to do

Unfortunately, most of the apps you listed are more like toys on iOS compared to the dekstop counterparts.
But they may be perfectly adequate for the original posters intended use (as they are for the thousands of people who use them daily). And iPhoto on iOS has a few features the desktop version doesn't yet.
One cannot really consider the iPad as a serious (doing more than just creating some quick holiday videos / edit photos) programming / video or image editor tool.

How seriously it can be used depends on what you are using it for, and your intended end result. Obviously it's not going to create the same type of work that can be created using $5000 worth of desktop computer and pro software, but then it cost 1/10th of that.
As we don't know panuccio11's intended usage (serious, fun, pro, amateur) we can't really say if it will suit his needs. But it's not correct to say it can't be used to create content, as the above examples and available apps prove.

A-GPS is real GPS. It stands for Assiseted GPS. The iPads with cellular have a GPS. They use WiFi and cellular to assist the GPS in locking on more quickly. The GPS is assisted by the WiFi and cellular. It will work just fine while flying.
WiFi ony iPads rely on WiFi for location services. They will not work while flying.

I saw that the "new" iPad was recently replaced at the same time the "Mini" was released. What is the difference between the iPad "3" and the newest model?

The two differences that I can see are the new processor for the 4th gen iPad - the A6X which is supposed to be twice as fast as the current 3rd gen, and the new Lightning connector cable on the 4th gen.
Essentially that's all that there is ... Both have the retina display, iOS 6, same size, and so on.
