I'm not sure what my restrictions passcode is, and how can I reset my iPod touch?
I have iOS 6, not sure specifically which version...

You have to either:
- Restore from a backup that was make before you added the Restrictions passcode. If you restore from a backup made with the Restrictions passcode the Restrictions passcode is also restored.
- Restore to factory settings/new iPod

    No, there is no "forgot password" link for a passcode set up on the device. That includes the Restrictions function. This shouldn't prevent you from sending the device to apple for repair/replacement service.

    Is yours a corporate iPhone? If so, your IT department may have some restrictions set.
    If yours is a private iPhone, at some point you did set a restrictions passcode either on that phone or the phone from which you are restoring the backup.  If you don't remember the passcode, the only way to remove it is to restore your phone as a NEW device and not use your backup.

    There is no "general" restrictions passcode nor any way to reset it.
    If there is a restrictions passcode set and you do not know it, your options are guess indefinitely or restore as new.

         At some point, I don't even remember doing this it must have been so long ago, I set a restrictions passcode on my phone. This has become a problem now because I have so many apps that I do not ever use that take up so much space I can no longer take pictures or put more music on the device. I have read that I need to restore to factory settings but that once I do that I cannot restore to a backup because restrictions passcodes are saved in backups. I have already backed the phone up to my computer as well as iCloud. Even the woman at the apple store told me I had to restore it to factory but was too busy to get further into it and I didn't have a genius bar appointment. If all else fails I can make an appointment and go in there. I just thought I may as well ask on here first to see if there was a way I could do it myself.     You can't. Restoring new means everything is erased. If you have a backup made before creating a restriction code, then you can restore that backup, but none later.
    Placing your device into recovery (DFU-Device Firmware Upgrade) mode:
    Follow these steps to place your iOS device into recovery mode. If your iOS device is already in recovery mode, you can proceed immediately to step 6.
       1. Disconnect the USB cable from the iPhone, iPad, or iPod touch, but leave the
           other end of the cable connected to your computer's USB port.
       2. Turn off the device: Press and hold the Sleep/Wake button for a few seconds
           until the red slider appears, then slide the slider. Wait for the device to turn off.
                  * If you cannot turn off the device using the slider, press and hold the
                    Sleep/Wake and Home buttons at the same time. When the device turns off,
                    release the Sleep/Wake and Home buttons.
      3. While pressing and holding the Home button, reconnect the USB cable to the
           device. The device should turn on. Note: If you see the battery charge warning,
           let the device charge for at least ten minutes to ensure that the battery has some
           charge, and then start with step 2 again.
      4. Continue holding the Home button until you see the "Connect to iTunes" screen.
           When this screen appears you can release the Home button:
