What should I do if my itouch was stolen?

I just lost my itouch last night and by now, it could have very well been stolen. I did set up a password to get into my ipod, but I know it's super easy to unlock it via Itunes. My question is: is there any way I can deactivate my itouch to keep anyone from accessing my information? I did not have an Icloud and so I wonder, is that the only way I could have done it?

    If it was stolen the thief will wipe it with the result that you will not be able to track it.
    Contact your carrier.  They may be able to block further use of the phone.  No good to you but then no good to the thief either.

    Change your iTunes (Apple ID) password along with any other password that was stored in the iPod.  If any passwords are associated with credit cards, contact the CC company and get your card replaced (with a new number).  If any passwords are associated with a bank or any other savings institution, contact them also and discuss approprate action with them.
    The "Find my..." function is pretty much useless if the device is in the hands of a thief.  All that is necessary is for the thief to connect to any computer with iTunes and "Restore as new."
    The only real protection you have is with the personal information on the device rather than the physical device itself.  This requires action before the device is lost/stolen.  If the device has significant personal information, it should have a strong 8-digit (or longer) password AND be configured for automatic wipe in the event of ten consecutive incorrect password entries.

    It can still connect to Wifi in Lost Mode. As long as you do not erase it, you will be able to track it via Find My iPhone. And even if you erase it, the Activation Lock will prevent the thief from ever being able to use it:

    IF you set up find my ipod on the ipod itself and it is on and it is connected to wi-fi and it has not been restored then you can go to icloud.com and wipe it/loacte it.

    No, sorry, there is no way you can get that information. The police perhaps could, but it would probably require a court order and it's unlikely the police will go to those lengths unless they have reason to believe that this theft was not an isolated instance and hence worth more of their time than the single theft of an iPod.
    Even if they got the ID, it may well just be yours. Apple's registration database often contains such errors; I get the same message for some of my devices when I know I registered them to my Apple ID and the devices are all still right here.

    Last week, my gf was stolen and lost her iPad. I thought that everything was lost because "Find My Phone" didn't manage to track the iPad location so the police could do something.

    What are the options here so I can rehave the stolen iPad, which Apple helped the burglar to keep it or even sell it?

    Apple didn't "help the burgler" do anything. Did she have a passcode on the device? If so, the thief would not have been able to access any of the functions needed to disable Find My Phone. Also, if the device doesn't show up in iCloud's Find My Phone, it may be that it is simply turned off, or not connected to a network.

    The music will only be where you put it.  If you failed to transfer it to your computer, and back it up, then it is gone.
    UNLESS, you are in the U.S.  Then you can use the newly released beta version of icloud to retrieve them.
