Syncing matches the content on the idevice to the content on the computer.  The exception is you can download iTunes purchases to your computer that only exist on your iPod.

    Anyway long story short, what exactly happens when I restore it. Do I lose my photos, emails, contacts. Will all of the songs be deleted so I could re-sync them from my computer, the way I want them?
    Can I also re-sync all my other stuff back to the iPod? This part is important to me.
    Or would it be faster to go to an Apple store and have them delete the songs, @ 100km from my house.

    yes u will lose all the files on it, if you choose to sync it to another PC.
    first. sync it to the computer you originally synced it to, hence back it up
    now go to new PC, and sync, loose all data.
    now copy data from old PC to new pc
    add it to itunes and such now tell it what media to sync
    another option, use icloud.
    tell icloud to sync all your photos, data and such and simply use icloud to sync up that stuff. as long as it does not go over 5gb.

    Ejecting is so old school. I just unplug it like I have been doing for years. No problems yet. I figure that the hardware shouldn't be affected even if there is a little data loss and if it is, it's crap and I will take it back.
    I think the ejecting legend has become a remnant from old-school mac days that hangs around to keep you from unplugging while syncing. Shouldn't be a problem....at least from what I have experienced on Windows. I am not sure if Macs still require that ejecting stuff on external media...

    Yes. Other things have synced including books, but I don't know how these happened. According to the 'audible' instructions it should happen automatically, but it doesn't.

    Download iTunes into your computer/laptop.  Upon iTunes completion, connect your iPhone 3Gs to your computer via USB port.  Wait for a minute or 2.  iTunes would automatically backup your iPhone without you doing anything. Make sure you're connected to WIFI.
