When I start up, EVERY application launches. How do I disable this?

I have a new macbook air: runs OSX lion.
I think this began after I installed MS office, or at the very least, has gotten worse since I installed it. There may or may not be any correlation. I have checked the preferences for all the MS office aps as well as the mac system prefs. The 'launch at startup' only has skype and itunes helper aps in it, and both are turned off, yet both still open upon startup, along with every other ap on the computer. Any suggestions?

A new 'feature' of Lion is auto-resume. When you shut down your computer (or log out) a dialog box appears asking if you want to launch the programs that are currently running when you restart. The default checkmark is to auto resume and you must change the answer if you don't want them to auto-resume.
Further, by default, the Dock no longer display a little light to indicate which programs are running so when you look at the Dock you might think nothing is running.
