When I try to sync my ipod to itunes it automatically backs up my ipod.

Which when it trys to back it up it freezes. Is there a way to sync my ipod without backing it up? My ipod has been connected to itunes for over 18 hours and has made no progress.

Try deleting or moving to a save place the existing backup file.  It is located here:
Mac: ~/Library/Application Support/MobileSync/Backup/
Windows XP: \Documents and Settings\(username)\Application Data\Apple Computer\MobileSync\Backup\
Windows Vista and Windows 7: \Users\(username)\AppData\Roaming\Apple Computer\MobileSync\Backup\
You have to have Show Hidden files turned on.
You can just delete it by going to Preferences in iTunes and deleting the backup by going to the Devices tab.
