Want to update to ios 6 ... but will the update erase all contacts and apps....photos etc?

It didn't for me, but make a backup first just in case.
That said, you should really consider whether to update at all, iOS6 is really, really, really bad!

MMS is a carrier issue... contact Verizon and ensure your account is provisioned correctly. I would think that someone would be intelligent enough to do that before buying a new device, but......
iMessage could be an activation issue or a network issue.
Have you tried Settings > General > Reset > Reset Network Settings?
Does iMessage work consistently on Wi-Fi?

Change how it syncs by enabling Manually manage music and videos, then you can drag and drop the music that you want on your iPhone. Revert it back to test to see if that resolves the issue.

Have your wife log in to her user account on the laptop. Launch iTunes, then connect her phone to the computer with the USB cable. Sync. That should put back all apps and media. Since you already upgraded her to iOS 5 she'll have to manually enter all her settings and preferences, and organize her home screens.

When you went through the iOS 6 set up - did you see the option to restore?
When you go through Setup Assistant on a new iOS 5 device, choose "Restore from iCloud Backup" and enter your iCloud account and password. You will see the three most recent backups for each of the devices on which you enabled Backup. Choose which backup to restore from.
After your device restarts, your settings and accounts are restored and Backup starts downloading your purchased music, movies, TV shows, apps, books, Camera Roll, and other content.
Note: You may be prompted to enter the passwords for all accounts enabled on your device. You may also be prompted to enter the password for for any iTunes, iBookstore and App Store accounts for which iCloud Backup is attempting to restore content.
A progress bar will appear underneath the apps that are being downloaded. To prioritize the restore of a specific app, tap its icon. Restore will attempt to download the same version of the app that you had installed previously. If that version is no longer available, the latest version of the app will be restored.

Since updating to iOS 6 on my iPhone 4S my iPod app runs very slow and crashes a lot. Once playing I can switch songs and what not with little difficulty, but if I go back to the list of songs/artists/etc it freezes or force quits. This has nothing to do with the Find my iPhone app being installed on the phone, but you do have to have Find my iPhone activated in the iCloud settings on the phone.

If you are having issues accessing your Shared Albums from your iPad (but not from your other devices), you may want to double-check your iCloud Photo Sharing configuration as outlined in the following articles, just to make sure it hasn't changed:

I tried powering down and re-starting the iPhone (as suggested at http://support.apple.com/kb/TS1275). This seems to have cleared the "...not connected to the Internet" problem, and iOS 6.1 is now in the process of downloading.

Probably because the previous owner had the phone hacked to unlock it, and when you updated it locked back to the original carrier.
Only the carrier that the phone is locked to is authorized to unlock it.
If the previous owner had the carrier unlock it, you wouldn't have any issues.

If you update when iOS 7 is available in the fall:
- If you update via Settings>General>Software update nothing will be lost unless there is a glitch. They happen sometimes. Therefore, make sure all your media is backed up and yo have an iPod backup
