When restoring your ipod touch, will it erase everything on it?

hello everyone
I was wondering if restoring your ipod touch will erase everything on it because my computer does not seem to be recongizing my ipod nor is itunes. And I was afraid that if I restored my ipod that everything will be gone from it. The reason I am worried about this is that I have important notes that i have typed on it and a lot of aps that I do not want to put back on (too much work).

If you restore to original settings it will erase everything on your iPod Touch.

If you must restore you can recover back to the last backup created when you last synced your iPod.

    With all you media (apps, music) in the iTunes library connect the iPod to the computer and make a backup. Do that by right clicking on the iPod under Devices in iTunes and select Back Up. Then restore the iPod from that backup.
    Note the the iPod backup that iTunes makes does not included synced media like apps and music.

    - A reset does not delete any media (apps, music etc) from the iPod.
    - A restore will delete apps, music and other media from the iPod.  If the media is in the iTunes library then a restore from backp will restore the media and after a restore to factory defaults/new iPod you can sync the media back to the iPod.
    - If not in the iTunes libray, you can redownload most iTunes pruchases by:
    Downloading past purchases from the App Store, iBookstore, and iTunes Store

    Restore, if iTunes will let you.  Everything except the password will be restored.  Connect via cable to the computer that you use for sync.  Be forewarned that it takes a long time.  From iTunes, select the iPad/iPod and then select the Summary tab.  Follow directions for Restore and be sure to say "yes" to the backup.  You will be warned that all data (apps, music, movies, etc.) will be erased but, as the Restore finishes, you will be asked if you wish the contents of the backup to be copied to the iPad/iPod.  Again, say "yes."
    At the end of the basic Restore, you will be asked if you wish to sync the iPad/iPod.  As before, say "yes."  Note that that sync selection will disappear and the Restore will end if you do not respond within a reasonable time.  If that happens, only the apps that are part of the IOS will appear on your device.  Corrective action is simple -  choose manual "Sync" from the bottom right of iTunes.
    If you're unable to do the Restore, go into Recovery Mode per the instructions here.

    It then installed iOS 5 automatically, and then I got the option to set up as a new phone or use last back up...so didn't lose anything.----
    I have backed up my iPod touch, and am ready to restore, but amm worried that if I do restore, I won't be able to restore back to my backup afterwards, this will mean losing some data. I just need confirmation that I will be able to get "the option to set up as a new phone or use last back up," as i really don't want to restore and find myself with an empty iPod.
    If it possible to do this, please coudl someone post a step-by-step guide on how to update using the afformentioned method, just to give me (and many others) peace of mind.

    When you restore an iOS device the IOS version that will be on the iPod after the restore is the latest available for that model device. For the 4G iPod that would be 6.1.6
