When will Apple Pay be available in Mexico?

Release date.

It is unknown.
Banks and Stores have to adopt it. Mainly because stores need to install the NFC terminals to accept Apple Pay, and Banks need to accept the protocols for Payment through said terminals.    Very few stores actually have these NFC terminals, and even fewer actually use them in any capacity.
It will probably be a while until its available in Mexico.

    any news when Apple Pay will finally be available in Germany? For me Apple Pay was definitely a strong argument for going away from my "old" iPhone 5 and buying a new iPhone 6 right from the start in September last year. Now, 7 month later, nothing happened. I still can't use Apple Pay here in Germany. Why that? is it so difficult to convince banks here in Germany to support Apple Pay? Is Apple just too greedy and can't find banks willing to pay the fees dictated by Apple? My hope was that things might change once the Apple Watch is available ... but still no news about Apple Pay in Germany ... or Europe in general. After waiting such a long time now I'm quite disappointed.

    No one here would know anything that hasn't been announced by Apple.  Once Apple makes an announcement, then we'll all know at the same time.

    Nope.   The iPhone 5 lacks the NFC chip that the Apple Pay service requires in order to connect with the payment terminals at stores.
    However, once the Apple Watch is released, you can use it in conjunction with the iPhone 5, 5c, or 5s for Apple Pay based payments.

    Um, no.  They're waiting to release it until a reasonable hour so that if customers have questions about how to download it or experience issues with downloading it, then the Apple support advisors will be available and the Apple Stores will be open, and the engineers that need to be on hand to manage any server issues are on-site.
    In other words, they want to make sure that real, live human beings are on hand to assist as needed.  It's stupid to expect them to release it in the middle of the night when there wouldn't be any of those support people (or very, very few) available.
