If you buy an UNLOCKED iPhone directly from an Apple Store or apple.com you can use it in India, however, it will not work on LTE, only on GSM and 3G. And the warranty will not be honored in India.

You'd be better served by purchasing an officially unlocked iPhone 5 in one of the EU countries. Except for the EU, iPhone warranty/support is limited to the country of original purchase. Thus, you won't have any warranty or support, for a US iPhone, where you live. However, if you purchase an iPhone in any EU country, your warranty/support is EU wide. Further, US iPhone 5's do not support LTE in Europe, only the models sold in Europe support such. Given these two issues, doesn't it make more sense to purchase your phone in Europe?

I will have a trip to USA next week. It's cheaper and more convenient to buy an iPhone in America and I wanna get one during my trip. My friend said it is not 100% sure that you can buy one in a retail store without a booking. However I can't find any way to do booking. I know there's a pick-up service but it is not suitable for me.

You can call them to see if they have some in stock. The last time I visited an Apple Store they did have unlocked iPhones in the store, but stores inventory vary.
After looking at this it seems that they do not have any in stock at the Fifth Avenue Store.

What region and network are you planing to use internet in?
T-Mobile operates in 3 LTE frequency bands in the US - B2, B4, B12 (for B12 the company planned to start operating just in July 2014) and 3 bands in the EU - B3, B7, B20, in depends of the region and license type. But Gobi 5000 (Sierra Wireless em7355) supports only 2 bands of 6 above - B2 and B4.
At the same time Sierra Wireless em7345 LTE card (another one card for the new line Lenovo notebooks) supports 5 bands of 6 above, except of B12.
So, there are no advantages for em7355 if you are not planning to work in Sprint LTE network and 3g CDMA/EV-DO networks of US carriers.
Supported frequency bands isn't a "locking" feature. It's a design, the set of components, filters. Purchase the card you need on shop.lenovo or altarnate resources.

If I buy an unlocked iPhone5 in USA will it work in UK?

I'm away to the States on business in October. Considering the exchange rate it would be considerably cheaper for me to buy an unlocked iPhone5 over there.
However, I'm unsure whether it will work properly in the rest of the world? Does anyone know if the US spec will function properly in UK/Europe?
Of course, there may not be an unlocked version available by then but if there was.....?

It will work in the UK, though you will need a plug adapter for the charger (you don't need a convertor for the charger).
If you get a 3G version then get the AT&T version as they use micro-sim cards, so you can swap in a UK micro-sim card. The Verizon iPad is CDMA based and doesn't use micro-sim cards, so from a built-in 3G point of view isn't much use in the UK (I'm not aware of any CDMA carriers in Europe).

Officially unlocked iPhones are not sold in Canada. You could buy one in a country where they are sold unlocked, then use it in Canada with a Fido or Rogers SIM. The countries that sell them unlocked are listed here:

It may not be easy to buy, though, as they may require a local address, or payment with a debit or credit card issued in their country. Also, the warrantee is valid only in the country of sale. Even if you do get an unlocked iPhone, it may be difficult to get a local SIM in some countries (such as Japan or Korea). Things are easier if you know a resident of the country who is willing to buy the phone or SIM for you.
You can use a locked Canadian iPhone in other countries but they charge high roaming fees for voice, and exorbitant roaming fees for data. Data roaming can be disabled in "Settings" > "General" > "Network".
Fido and Rogers have some international plans that will reduce roaming fees a bit. Check with them before you leave.

If you buy an iPhone at the UK or Canadian Apple stores, it should work on the GSM frequencies in both countries. LTE will not work as the LTE channels are different in each country and each iPhone sold in each country is only compatible on LTE channels of that particular country. Other wise it should be fine.
Be aware that only the Apple store (retail or online) sells the unlocked iPhone in the UK. I think the situation is similar in Canada. (It is in the US).

If the purpose is to use the iPhone in the US for a year and then in India, buying an unlocked iPhone at full price from Apple is a solution. But keep in mind as noted above, the LTE frequencies will be different in the two countries and the warranty is only valid in the US. If you buy the AppleCare+ warranty extension you will have to have someone in the US to send the iPhone to who can take it to an Apple store for support.
