I was having the same problem as you today with my iPhone 4S which doesn't sync completely with my iTunes Library like my iPod does. Looking for a solution, I saw your post so I don't know if you have solved your problem. I stumbled on a solution which worked for me by turning off iTunes Match, by going to "Store" in your iTunes Toolbar at the top left of your screen and turning off iTunes Match from there. You should then be able to 'drag and drop' as normal.
I've been getting round the problem in the past because I have the classic iPod (not the iPod Touch) which syncs fine with my iTunes Library whether iTunes Match is on or off. But I had to download a third party app called "iRip" which stores any music you want it to and allows you to transfer songs between devices. You do pay a one-off fee for the download from the internet, but it helped me sync songs between my Apple devices so I think it's worth it.

    Un-sync all your music to remove it from the device, then restart (hold down the home button along with the sleep/wake button until you see the apple, then let go). Now re-sync your music.

    It sounds like you are try to delete the songs by connecting the iPod to other than the computer from which the songs were synced. You can only delete songs synced to an an older iPod (pre iOS 5) by connecting the iPod to its syncing computer and unsync them.

    Are you manually dragging and dropping files in an attempt to move music from your client itunes to your idevice?  And seeing the process hang and potentially locking itunes?
    I have been having similar issues, but recently found something that works for my ipad air.  Not sure if this will help you but...
    In your itunes client music library:
    Right click on one music file
    Hover over the Add to Playlist option
    Select a playlist from your iphone in the side popup window
    See if that helps move the music file over.  If it does, test out the original drag and drop on a new file.  The move to playlist option seemed to clear whatever blockage I had and I'm not dragging and dropping with ease.

    You can transfer itunes purchases:  File>Devices>Transfer Purchases
    Why not copy them from your old computer, ro your backup copy of your old computer?
    No need for such a gross over reaction.

    This happens with ALL of your iPods?  So, it's probably not a problem on the iPod side of the connection.
    If you have not recently (at least since this problem occurred), be sure to restart your Mac.  At the same time, you can also Reset your iPod

    A Reset just restarts the iPod (it is not a Restore).  Then try it again.
    If that does not help, select the iPod in the iTunes sidebar, under DEVICES.  Over to the right, on the Summary tab, if Enable Disk Mode is currently NOT checked, see if checking it and clicking Apply makes any difference.  This is more of a test.  If that setting makes a difference, it may provide a clue for the actual cause.

    Last week, I tried to purchase some songs from the iTunes Music Store with my American MasterCard (a debit card) which is listed with my Swedish address at my U.S. bank. As I had never purchased at the iTunes M.Store before I was instructed to 'review my account'... which I did. It had my present Sweden address and my Mastercard listed as method of payment. Upon submitting the form, it was rejected, saying that my MasterCard was 'invalid for Sweden'! So I then go to the Apple-Sweden Store and purchase an iTunes Music Card which I receive in the mail the following day. Now I follow the Apple advice posted for purchasing music by redeeming an iTunes Music Card without listing a credit card (http://www.apple.com/se/support/itunes/store/giftcard/#GCA)... except there is no selection for NONE as indicated in these instructions.... So once again when I submit the form it is rejected, meaning that this time I have already spent money for the iTunes Music Card that is now worthless to me!
    Is there another way I can redeem this card without going through that 'review account' window...?
    I don't care to set up another account by setting up another e-mail address just to do this... as I want all of the Apple business to go through my Mac.com account as it should be configured to do so!

    O.K. Everything seems to be in order now!
    I don't know what happened but this is the results....
    After attempting to edit change the information on my iTunesMS account at least 7 times, I posted the above question, logged out of iTunes, closed down all my apps and turned off my computer.
    A few hours later, I thought I would give it one more try and when I turned on iTunes, went to the Music Store and then 'reviewed' my account... it had my old American address on it with the country listed as Sweden... I just left it alone, as it didn't have my credit card info listed at all... Curiously, I'm clueless about that (though I did send this same complaint to Apple during the first posting... did that have anything to do with it?) When I clicked the continue button (without changing any info) it prompted me that I was finished setting up my iTunes Music Store account and I was immediately able to download some songs....(using the iTunes Music card--- I have not tried my MasterCard!)
    So basically, I did nothing except close iTunes, turn off my computer and later rebooted it and opened iTunes! Strange... does that seem like a fix or what?

Anyway I re-authorised my computer, but now it wont allow me to move songs from my iTunes Library onto my phone. Why is this? At first I thought, perhaps it's my USB lead, but after trying four (no idea how I've managed to collect so many) it seems not the case. Help!

    All is good, I hadn't turned on the 'Move music manually' or something! Silly!

    Why? Licensing from the media companies.  If an agreement hasn't been set up then Apple cannot sell the media.  You can probably bet that if Apple can sell something they will because they are probably very happy to take your money.
    You can see if another vendor in your country does sell the item.
