Why can't I update to new iOS on my iPod Touch 3rd generation

My iPod Touch says it is up to date when I update.  I have iOS 5.1.1.  I would like to install some additional apps on the device but a message says I have to have a newer iOS (at least 6.0).  How do I resolve this issue?  I have the 64 GB model 1318 (3rd Generation) and still have plenty of room to update the OS.  I did a back-up today so that I wouldn't lose any data.  Thank you for your help.  Patty

Apple Club - filter apps by iOS version.
Starting when iOS 7 was released, Apple now allows downloading the last compatible version of some apps (iOS 4.2.1 and later only)

You first have to download the non-compatible version on your computer. Then when you try to purchase the version on your iPod you will be offered a compatible version if one exists.

    Hello!
       A month or so ago, I bought a new MacBook Pro for myself, an iMac for the wife, a 2TB TimeCapsule iCloud and  Music Match. The whole 9 yards. Since then, I have't been able to put new playlists onto my iPod Touch. When I plug it in and switch to the "Music" tab for the iPod, I get " iTunes Match is On. Brian's Newest iPod can access music in iCloud. Songs can be downloaded and played via Wi-Fi or a cellular network."
    Well, no I can't. The reason I know this is because yesterday, I was given two brand new music CDs, which I uploaded onto the MacBook Pro. Made a new "AC/DC" playlist and everthing. And now I can't get this playlist or any new playlist onto my Pod. Looking for "AC/DC" under the "Artist" tab or "Back in Black" on my iPod does't work either.
    This is Gawd-Awful annoying. I don't WANT to play everything from Wi-Fi or cellular network. (Don't need/want an iPhone-that shouldn't count again me, should it?) The whole point of buying a 32 GB iPod was because I am usually not on a network of any type during most of my day. How do I get the stinkin' music onto it?
    Maybe I am missing the point of both iCloud and Music Match. I thought the second allowed me to download better versions of all the songs I have on my computers. (Was that payment a one-time thing or will I have to pony up each year, btw?) And iCloud meant that I could listen to any and all of my songs on anything with an Apple Logo on it via wi-fi. But is that the only way?

    Nope, though it did allow me to get some missing songs back onto my iPod. That's something. But neither "Back in Black" or "Dirty Deeds" show up anywhere on the Touch. Could this be because iTunes has no deal with AC/DC?
    Quite frankly, at this point, I'd really rather not have the "ease of use" of iCloud attached to the iPod. It's not like I change my playlists that much. It would just be nice to get what I want onto my MP3 player. Not sure which one it was: iCloud, Music Match or the Air Port but the only real result of all the $ I plunked down is seeing all of my Wife's 231 Christmas songs popping up on my laptop. Really don't want them here. She SURE AS **** is sick of seeing all of my stuff on her computer.

    Sounds like there is a problem with the existing backup for your iPod Touch.
    You can delete the current backup followed by trying to manually create a new backup to see if this resolves the backup problem.
    Go to iTunes > Preferences. Under the Devices tab, select and delete the current backup for your iPod Touch.
    Follow this by right-clicing on your iPod Touch under Devices in the iTunes source list. At the menu window that appears, select Back Up to create a new backup for your iPod Touch.
    The backup does not include any iTunes content on your iPod Touch including all 3rd party apps. All iTunes content on your iPod Touch including all 3rd party apps should be in your iTunes library on your computer. All photos on your iPod Touch that were transferred from your computer are not included with the backup either. All photos transferred from your computer should remain on your computer.

    I suspect you really have a 2G iPod. Those can only go to iOS 4.2.1.

    Whenever you try to update iOS, or restore iOS, it will only go to the latest version available and supported by your device. For the iPhone 4, it is iOS 6.0.1. If you want to update, then iOS 6.0.1 is your only choice.
    Whoops, forgot:  You also have to have iTunes 10.7, and the software for the computer has to be compatible. Mac is OS X 10.6.8, or Windows with the latest service packs.

    You do not have a 3rd gen 8Gb iPod Touch. There is no such thing - really, truely, double true, extra double protected true. {lllaass, back me up here}
    Jailbreaking cannot be discussed on Apple forums., except to point you to the following article: http://support.apple.com/kb/HT3743 which will let you know why Apple strongly cautions against "jailbreaking".
    You could sell your current iPod and buy a new one, which will be able to use iOS 5.

    She has had it for about 6 months and this is the first time we have plugged it into the computer since then.  I can not exit out of itunes either.

    If you still have the problem after retoring the iPOd to factory defaults/new iPod then The iPod is likely defective and replacement is required.  You can make an appoinment at the Genius Bar of an APple store or take it back to BestBuy if within warranty

    I recently purchased a new Mac Mini with Lion installed. I downloaded the latest version of iTunes. Now I can't get iTunes to sync iCal from my iPod Touch (3rd gen) to my Mini. Everything else syncs great, and iCal syncs from my Mini to my Touch. My Touch has the latest iOS installed. I have tried rebooting my Touch, removing the sync calendars option from iTunes>Info and checking it again after applying and closing iTunes, and restarting my Mini. Any help will be appreciated!

    You appear to have a second generation iPod touch, not a third, and those can't be updated past 4.2.1. Apple sold 8GB second generation models at the same time as the third generation ones.

    Without knowing current status of the iPod:
    Try:
    - iOS: Not responding or does not turn on
    - Also try DFU mode after try recovery mode
    How to put iPod touch / iPhone into DFU mode « Karthik's scribblings
    - If not successful and you can't fully turn the iOS device fully off, let the battery fully drain. After charging for an least an hour try the above again.
    - Try on another computer                 
    - If still not successful that usually indicates a hardware problem and an appointment at the Genius Bar of an Apple store is in order.

    - Are you also having problems with the Home button?  Maybe it is sticking a little since to take a screen shot you depress the Home and Power/Sleep buttons at the same time.
    - I have not seen your problem discussed here before.
    - I would first try resetting the iPod:
    Reset iPod touch:  Press and hold the On/Off Sleep/Wake button and the Home
    button at the same time for at least ten seconds, until the Apple logo appears.
    - Next would be to restore the iPod via iTunes.  First from backup and if problem persists, restore to factory defaults/new iPod.
