Why did Siri open without me holding the home button down

I was playing music from my iPod touch 5 when all of a sudden my music stopped and Siri opened so I closed Siri but then for the first two seconds my music was playing supper fast.

If it happened ONCE, I'd ignore it.

Try doing a two button reset. Press and hold the home button and sleep/wake button (power button) until you can tell the phone shuts off or for 2 minutes. Then try turning it on.

Most likely the LCD Display connector simply came loose from its logic board connector. Take iPhone back to where it was repaired, and ask them to simply press the connector back into its place. Ask them to apply a bit of foam material or several small pieces of tape on top so the pressure of the flex connector plate holds it properly in place for the future.

I did how ever remove the command key and wiped it down and it turns on perfectly!
but now the keyboard keys seem to be out of place or something. For example it makes a "ping" sound when i hit some of them, when i hit function or control it puts the letter Z.

The manual guide tells me to go to Settings>General>Siri. At the General menu "Siri" doesn't appear. What should I do to set Siri up if it doesn't appear at settings>general?

Plug it into power for at least 15 minutes. If it doesn't automatically come on, try a reset... press the home and sleep (on/off) buttons until you see the Apple logo, ignoring the slider. Takes about 5-15 secs of button holding and you won't lose any data or settings.

I really don't have an answer for that one. I guess that while trying to get things working correctly, I would use the most basic monitor I had which in your case would be the Eizon using the Thunderbolt port and adaptor.
When you boot into Safe Mode the startup is quite slow, but you should get the Apple logo and then the spinning gear below it (release the SHIFT key when it appears.) Then after a little more time you should see a gray progress bar appear below the spinning gear. When that disappears the computer will startup to a login screen.
