Why does iTunes not give me the option to backup my iPhone?

I have three iPhones in my family. On two of the iPhones, I am able to plug them into my computer and do a local backup (by selecting it in iTunes, right clicking and choosing "Back Up"). There is one phone, however, that does not allow me to choose this option. It takes me directly to the "Welcome to your new iPhone" page in iTunes, and asks me to restore it from a backup. I, however, do not have a backup on this computer, so I clearly do not want to wipe the phone and restore a backup.
How do I remedie this? Is there another tool that will allow me to create a backup?

Why does itunes and app store appear in french on my iphone?

I recently updated the software on my iphone 4. Now the itunes and app store display in french only. I live in Quebec, but French is not my native language. Is there a way to switch it back to English?

Assume you have set up accounts as IMAP, so it is reflecting the state as it is on the server. You will need to access your mail via web and delete. Maybe the server did not sync with outlook exchange for deleted items.

Why is iTunes re-syncing songs I already deleted off my iPhone?

Sometimes, not all the time thankfully, but sometimes when I connect my iPhone 4S to iTunes, it will sometimes re-sync previous songs I had already deleted from my iPhone. These are songs I did not want in my iPhone and obviously deleted them but sometimes iTunes will just sync it right back.
I can't just cancel the sync because it'll just do it again the next time I reconnect, I went to Auto Sync but I really didn't see anything that would change what is happening. It is very annoying because sometimes I will delete entire albums and iTunes will RE-DOWNLOAD everything right back to my phone and I have to go back and delete it again.

how do I avoid doing it and get the notification to stop coming up?

Were the music videos purchased with a different Apple ID than the one you are using for iTunes Match? If so, I don't believe they are eligible (same is true if the music video was not purchased from the iTunes Store).

ITunes 10.5 keep downloading IOS 5 onto my iPhone 4GS

Why does iTunes 10.5 keep downloading IOS 5 onto my iPhone 4GS, when it already has IOS 5 as a default on the phone?
I clicked "Check for Update" and it says that my iPhone IOS is update to date. However, when I try to do a restore, iTunes will contact the iPhone server and download IOS 5.
What gives? Is there a way to do a restore on my iPhone without having to download IOS 5?

Restore has always worked that way, even in versions before iOS 5. It never keeps the OS file (it's a pretty big file because it's an operating system, so why would you want that to stay on your computer and take up space?) so it always has to download it again, whenever you want to restore your iPod.

Try force rebooting it, hold down the power and home button for 10 seconds until the apple boot logo comes up. If that doesn't work, try rebooting your computer.

Sorry, but officially Apple does not allow redownloads of purchased items other than iPhone/iPod touch applications. The official statement of their policy can be found here, among other places.
For redownloading apps, look here for instructions. For songs, movies, and videos, if you don't have a backup of your purchased items and don't have them on another iOS device, you may be out of luck and will need to repurchase your content.
If you have your content on an iOS device, post back and someone here can help you get them restored. Otherwise you can try contacting iTunes Store Customer Service (select the "Music Purchases" or "Video Purchases" category, as appropriate, then "Lost or Missing Items". You'll find either an "Express Lane" button - just follow the instructions to get to the contact form - or an "Email Us" button) ") and explaining what happened. Reportedly in some cases Apple has allowed redownloading on a one-time basis.

If no other USB power adapter is available, try connecting to a high-power USB 2.0 port (not a keyboard). The computer must be turned on and not in sleep or standby mode.
Try another USB cable if available.
