Can I modify a pdf file containing a signature field prior to download?

I have a pdf file I use as a template and in my .net application I fill in a few fields using pdfstamper, iTextsharp, etc.  I'm new to this.
That all works.
I also have a signature field in my document.
After I modify the fields, with the person's name, etc., I download it to the client machine, open it in Adobe Reader X, and ask the user to sign the document.
I get an error saying "This document enabled extended features in Adobe Reader. The doc hsa been changed since it was created and the extended features are no longer available......"
Is there a way for me to do what I'm trying to do?  I hope this is somewhat clear.  It appears that modifying the fields with itextsharp is what's causing the error to occur.

More specifically, here's what I'm doing.  There's a desk where people come to pick up a gift card.  When someone picks one up, a clerk runs this .net program, selects the persons name form a dropdown list, I modify a pdf file (using iTextSharp), by adding the person's name, the serial number of the giftcard, etc, download this file to the client desktop, where the person signs using an ePad.  Then the clerk saves that pdf file.
The clerk will not be able to go into the menus and remove and/or save Reader Usage Rights.  Is there a way through code that I can add Reader Usage Rights after I modify the file.  It sounds from your replies that that's what I need to do.
Also, I don't really care about the official "signature", security, certificates, etc.  I just want someone to be able to scribble onto the document using a signature pad. 
I do have Acrobat Pro X and LiveCycle.  (I assume that means I have LCR Extensions.)

    Hello and sorry for the long delay in answering.
    I have tested several pdf files that only contain scanned images.
    I always selected the correct language for text recognition.
    The first I tried was a Spanish document with 13 pages, converting to *.doc. The original had 3162 kB, the newly created Word document has 11836 kB. It contains only images, every page in the PDF document is an image.
    Then I did a German document with only one page, it was converted beautifully into a WORD-Document.
    Same for a Spanish document with only one page, it was converted beautifully into a WORD-Document.
    Then I tried a again Spanish document with 18 pages, converting to *.docx. I took about 10 minutes due to my slow Internet connection. The original has 3807kB, the converted file 6559 kB. The opened converted docx-file is almost empty.
    Is it possible that multiple page documents do no work?
    Would you like to have a look at these documents yourself?

    Formscentral isn't designed to allow for the modification of PDF files, forms or otherwise. If you have saved forms created in Formscentral as PDF you will continue to be able to modify them in a program like Acrobat. Hope this helps.

    From Adobe I selected 'Create' and choose 'PDF from File' and I selected a Word document. 
    Adobe converted the Word document to a PDF and it look great!!!!!
    I want to modify the PDF file and change the 'text', but it will not let me.
    Will I have to convert the Word document to a PDF everytime I want to change 'text'?

    If you are saying you created a form from the DOC file, that may be a bit of an issue. First, you would generally edit the label in just the way that was mentioned with the text edit tool. However, it may depend on how you created the form. The creation process is important and that may be the problem. If it was created with the Designer tool, then you can not edit anything in Acrobat. Designer creates a XML form that is not compatible with the Acrobat tools. You may be able to edit it in Designer, but not Acrobat. You should still be able to go back to WORD and recreate the PDF.
    If you created the form manually and don't want to deal with recreating the fields, the print the WORD doc to a new PDF using the Adobe PDF printer. Then open your form and use Replace pages to put the revised document behind the fields. The fields will remain intact.
    Again, if the form was created in Designer, you may have to do such changes in Designer.

    I'm using Mac OSX 10.9.2 and latest version of Adobe Reader on a Macbook Air. I've tried Preview, Pages, Mail, PDF Signer. All give the same error message.
    Here's what the folks at PDF signer told me a couple of days ago:
    That PDF document was created using Adobe LiveCycle Designer and contains
    proprietary Adobe data (known as XFA forms) that is not part of the PDF
    specifications. This PDF document will only open in Adobe products (Acrobat
    and Reader), all other PDF viewers/editors are unable to open these kind of
    documents (e.g. it won't open in the Mac's "Preview" application as well).
    Unfortunately, Adobe uses this to promote their own products instead of
    providing the information and tools for other PDF engines to use these
    documents.

    Did you enable the Reader Extended PDF -> Enable Additional Features??
    You can do this using Adobe Pro...
    File -> Save as -> Reader Extended PDF -> Enable Additional Features

    I found an answer to my own question. A work around of sorts.
    Download Photoshop Elements 6 for Macintosh. With PSE6 I made a slide show with 550 images 1920x1200, without thumbs. I ran into one problem making the slide show. My images contained 4 images which had not ben created by Photoshop and could not be included in the slide show. Opening the images in Photoshop CS4 and re-saving them still did not make then acceptable. Not a big deal. I probably could have fixed the four images by stripping all EXIF data before opening them in Photoshop. BTW, PSE6 made the slide show in demo mode.
    I hope the bug in Photoshop CS4 will be fixed in Photoshop CS5.

    Adobe PDF Pack is an online subscription--it definitely allows you to combine several files into one PDF file. For more information about PDF Pack, see Reliably Create PDFs, Convert PDFs, & Merge PDFs Online | Adobe PDF Pack. If you don't have the full version of Acrobat, this is a great solution for combining PDF files.
    However, if you're using Acrobat (not Adobe Reader), you combine files by following these steps:
    Open a PDF file that you want to add pages to.
    Click the Pages pane on the Tools panel (on the right side of the application).
    Click Insert From File, and choose the file that you want to combine with the PDF that you opened in step 1.
    Make any changes necessary in the Insert Pages dialog box--these settings determine where the new file will be inserted.
    Click OK.

    You can prevent it from being printed by applying a security policy to it
    in Acrobat. The rest can't be prevented, unless you spend  a LOT of money
    on DRM protection.

    Acrobat is capable of repairing the damaged PDF' ,however it depends on the requirement as to how do you want to repair them.
    There could be several reasons that can damage a PDF.
    We need to know the cause that has damaged those PDF' and how exactly you want to repair them in order to assist you accordingly .

    How can I quickly view pdf files like I can do with Windows Picture and Fax viewer for jpg files? I need to look at several thousand PDF files. It takes too long to open each one individually. The only thing I could think of is combining them into large groups and then using the Navigation index. But I like the way windows Picture and Fax Viewer does it because you can keep the files separate. Combining PDFs causes loss of individual file names. That would be a problem since I do need to have the individual file names.

    Windows Picture and Fax Viewer is a DLL and is started via a rundll32.exe call and can't be set as an application to handle images in Firefox 3 and later versions.
    Try to set Windows Picture and Fax Viewer as the default viewer in Windows, then it should be listed automatically in the Mozilla Firefox Browse dialog.
