Change Label at runtime

I have come over from c# and .net once again to try my hand at coca. In C#.Net there is a way to create a label on the form, and then when the app launches you can assign a value to that variable. For instance if you want to display the time and or date on the form for the user. You might create a label (call it uiTimeLabel or uiDateLabel), then create a timer object and in your code in say the form.load method do something like this.uiDateLable.Text = DateTime.Now.ToShortDateString() and this.uiTimeLabel.Text = this.DateTime.Now.ToShortTimeStrion(), and your date and time would magically appear in the two aforementioned labels. Can this be done in Cocoa? It seems so simple a concept that it has been glossed over. Any help would be greatly appreciated.

Now I get it, well, Cocoa is very simple, and that's quiet disturbing
You have multiple choices for that.
You can on one hand build up the form with simples NSTextFields, create a controller class of your own, create an outlet for each text field and link the outlets to the fields.
Or, you can use the NSForm controller, and use only one outlet for the form, you can access each form cell through tags.
And you can mix up those techniques, because a form apparently (I think you can modify that too) doesn't integrate date pickers you can use the simple text display of the date in a regular cell, or add the date picker...
