I'd like to change my iCloud email address or create a new one, how do I do this? I'm starting a new business and I've not really used my iCloud email address, I'd like to change the name to the business name. Can I do this? If so, how?

You can't change an iCloud email address.  You can create an alias address to use that will receive email in your current iCloud inbox, but it will still be an @icloud.com address.  If you want to do this, this article explains how to create an alias: http://support.apple.com/kb/PH2622.  Note: once you create an alias address, you can't use it to create a new iCloud account, move it to another account, of reactivate it should you ever delete it.
You should also be aware that iCloud is designed for personal rather than business use, and as such, there are limits place on iCloud email accounts as outlined here: http://support.apple.com/kb/ht4863.

    You can change your details at the address above (you can't change your ID if it's a me address).
    You can of course create a new account at any time and add it as a secondary to your existing account or use it as a primary account and add your existing account as a secondary account.

    After having a mac.com email for nearly 10 years I fell for a scam email and now am getting spammed daily in my email account.  I use this email account for everything and would like to either block the spam emails - although that's hard since they change their email address daily - or just get a new icloud email address.  I've researched this and have not found this easy.  Any suggestions on how to change my icloud email account? Keep in mind all my devices are connected through this email including iTunes.  Any help is appreciated - thanks!

    To get a new iCloud address you would have to create a new iCloud account and migrate your iCloud data to the new account.  If you want to do this, go to Settings>iCloud and tap Delete Account, and when prompted about what to do with the iCloud data choose Keep on [My iDevice].  Then set up a new iCloud account with a new ID, turn you iCloud data syncing back to On, and when prompted choose Merge to upload your data to the new account.  When you turn Mail to On you will get a new @icloud email address (@mac and @me addresses are no longer available).  Once your data is in the new account, you can just delete the old account from your other devices without saving the data on the device, then sign into the new one and the migrated data in the new account will be synced back to them.
    If you need to, you can change your iTunes ID to this new email address.  This guide explains how to change an Apple ID name, but you can follow this and edit the primary email address instead to change it: http://support.apple.com/kb/HE40.

    It isn't possible.  If you need to use a different iCloud account with a different ID as your primary iCloud account, you can still set up your other iCloud address as a secondary account by going to Settings>Mail,Contacts,Calendars>Add Account>iCloud, signing in with your ID and turning Mail to on.  It will be fetch rather than push email, however, as push is only supported in the primary account.

    However, all is not lost. You can add up to three 'email aliases' - these are additional addresses (not accounts) which deliver into the same inbox as the main account. (In fact it's a good idea to give out alias addresses, rather than the main address, because if they attract spam you can easily change them.)
    You should be aware before you start that once you've created an alias you cannot turn that address into a full iCloud account or move it to another account.

    Once created, you cannot change your main iCloud email address.  You would have to create a new iCloud account to do that, and the email address would end in @icloud.com.
    If you want to keep your current iCloud account, you would have to create and alias email address as explained here: http://help.apple.com/icloud/#/mm6b1a490a.  This will be a new @icloud.com email address that will deliver email to your current iCloud inbox.  Just be aware that an alias address is permanently tied to the iCloud account you create it in.  It cannot later be used to create a new iCloud account, or moved to another iCloud account.

    I do have an alias but I need this to be the default as when busy I forget to change from the unsuitable one.

    1. Just store your photos on your Mac or PC.
    2. You can create a new account in "Settings > iCloud" or a secondary account just for Mail, Calendars, Contacts, Safari, Find My iPhone in "Settings > Mail, Contacts, Calendars > Add Account... > iCloud"

    I had an Apple ID long before iCloud came around.  Naturally, my username was my email address, let's say [email protected]  I signed up for an @me email address when they started just to try it out, but never used it.  Either by default or by my own decision, my @me account became the same as my old email address: [email protected]  Later, Apple issued the @icloud email addresses, so I now have: [email protected] as well.  I want to set up a different icloud address, one that I would actually use, let's say [email protected]  Then, I would like to associate that address with my Apple ID and delete the oldaddress@icloud address altogether.  Can I do this and if so how?

    Since your Apple ID is already associated with the current iCloud account (and the account cannot be delete, it can only be abandoned), you can't use it to create another.  You would need to create a new Apple ID with a new non-Apple email address to create a new iCloud account.  You can still use your current ID for everything else; the iCloud ID does not need to be the same as the ID you use for other services (iTunes, etc.).
    You would then have to migrate your iCloud data to the new account and turn on your iCloud data syncing.  When you turn Mail to On, you can create your new @icloud email address (but type carefully since once created it cannot be changed).  You @me iCloud email address would remain associated with the iCloud account you are leaving but it sounds like you don't want to use it anyway.  You can set up email forwarding to forwared email sent to your @me address to your new @icloud address while your contacts transition to your new address.
    If that sounds like something you want to do, I can give you the steps to migrate your data to the new account.
