I have my phone backed up very often to iCloud. Is there any way to see a old message?

I use iCloud back up often I need to recover a message. Is there any way to get the message back?

You can't see anything contained in the backup until it is restored to your phone.  You can't even see if the older backups exist without starting the restore process to see what backups are available to restore to.  All you can do is back up your phone to your computer using iTunes, then try restoring the older backup(s).  If they aren't there, or don't contain what you're looking for, you can restore back to the iTunes backup to get back to where you are now.
