GarageBand is not really notation software. It can show you the score, but you have no control at all over the layout. Any real notation software like Finale would be preferable, for what you want to do.
You can show the musical score in GarageBand for any software instrument track in the Track Editor. What is your GarageBand version?
Basicallly, in all versions, you enter the music by playing and recording your midi keyboard, or by manually entering the notes by command -clicking onto the staffs in the track editor to add notes. You can add them directly in Score-view or in the piano-roll view. In Piano-Roll view it is easier to adjust the timing of the notes.
