Making and backing up charts with the ipad.

Hello Comunity. I am a doctor with a starting private practice. I provide mostly at home consultations and use my ipad mini. I have been trying to find a patient chart but none so far fit my needs (being able to costumize it) and backing up. Bento has been pointed but i couldnt really understand how the backing up works. They say it happens with the backup with itunes (We appreciate you taking the time to send us your message and for your interest in our products. If you are not using the Bento 4 for Mac application and only using the Bento 4 for iPad, it would be suggested to use iTunes to back up your files. For further assistance on backing up your files it would be suggested to contact Apple Customer Care for further assistance.) but I would like to be able to save it on a external hd or on a pendrive (like with the PDFreader,etc).
Does anyone have a tip or idea?

It's probably a bad idea to think of the iPad as organising things as files in folders owned by the user.  It doesn't work that way.  Each app 'owns' its own database files and there's no common 'home folder' where all of a user's files are stored.  Also, the backup is one solid image: you're not expected to be able to dive into it and access individual parts.
A Bento database on your iPad is simply a file owned by the Bento app.  You can use the 'apps' pane in the sync part of iTunes to copy Bento files (which are the databases) onto and off of your iPad just the same as you would use it for files belonging to any other iPad app.  And if you have a copy of Bento for your computer you can open that database on that computer.  They use the same file format.
