Apart from the fact Apple is clearly trying to force me to buy a new iPod, could you explain how that can possibly be done???
I have used the appstore with my iPod Touch to update to the newest version, wich NEVER WAS signaled as incompatible with my model. Now I cannot use, for example, Facebook, iBooks, Airvideo (wich I paid for, )...
Because you can have more than one device so iTunes does not check if the update is compatible with a particular model device.iOS that you have. The only way is to look at the Requirements section of each update and make sure the update is compatible with your device and iOS
I have used iTunes to restore from a security backup, BUT it looks as if iTunes continues to search the newest version of the apps it has in its folder, rather than the one that "should be" in the backup of the iPod.
Correct. You can only have one copy/version in your iTunes library.
Is there really a copy of the older apps included in the backups, or not??

You see, this isn't really nice for users, though a good commercial strategy from Apple.
I have contacted Apple iTunes Support, but all I've got is 3 credits for video in the store...
I dont want video, I want back ALL THE FUNCTIONALITY I BOUGHT MY DEVICE FOR.
As said before, unless you have a copy of the previous version like in the computer recycle bin/trash or in a computer file backup yo are out of luck
