You can only download the newest version of Aperture 3.
But try to buy a boxed retail version of Aperture 3 at Amazon. Be sure to get a full version and not an upgrade from Aperture 2 to Aperture 3.
The boxed version will install Aperture 3.0.x or Aperture 3.1.x.

If you have the older version from the app store and it's in your computer's iTunes library (if it's not then you should be able to add it via File > Add To Library), then you will need to delete the current version from your iPad and then connect the iPad to your computer and sync that older to it (syncing apps). You will need to remember not to 'update all' via the Updates tab in the App Store app, otherwise it will get over written with the current store version.

I don't believe that for an instant. List one thing that your iPod was advertised or otherwise promised by Apple to do when you bought it that it doesn't do now. And I don't mean apps that you failed to download when they were issued in a version that would run on iOS 4.2.1 and that now require a newer version of iOS.
In any case, if you're that unhappy, go buy an Android device, then. But I suggest you price them out first. You may find that they're really not cheaper, particularly if you want to keep up with anything like current Android releases. I doubt anyone here really cares if you find some other product you think suits you better.

Legally, you can't. Apple owns the rights to the app, so only they have the legal right to distribute it. If you have a backup of Snow Leopard you can access, you can just grab that version of TextEdit and replace the one in Lion. Though it's slightly more complicated than than.
You can use Terminal to delete the Lion version of TextEdit since the OS insists it cannot be deleted if you just drag it to the trash. You can also do a Get Info on Lion's version of TextEdit. Then click on the lock and enter your admin password so you can modify it. Change all permissions to Read/Write and close the box. You can then put it in the trash.
Make sure to put the SL version of TextEdit in your user account. Otherwise, when you do a Repair Permissions, it will destroy SL's TextEdit by trying to set its permission to where the OS thinks they should be for Lion. It's safe in your user account since a Repair Permissions doesn't do anything to any file or folder in user account. I made a folder named Applications in my user account and put the Snow Leopard version of TextEdit there. There's no need to tell the OS where to find it. All TextEdit documents will open in the old version automatically.

Apple never replies to posts made in these forums. These are user-to-user forums only.
As to answers from fellow users, I can only guess that others assumed that you could do a web search and find what you're looking for. But Apple almost never keeps old versions of iTunes (or any other software) available for download. The only place you could find an older version of iTunes 10.x would be on an unauthorized site, and that carries a signficant risk of getting malware rather than the software you're looking for. You can do a web search and you can probably find such places, but you're on your own as far as whether or not they're reliable.
