IPod doesn't mirror per se like iPad, but certain apps allow it. I use filmon for instance and the mirror icon appears when the video kicks in, but other apps such as iPlayer don't allow it. Fustrating.
Airplay does work though from iTunes.

It sounds like it is working the way it should be. You do have to click one of the two buttons. The closest thing to doing it as a single operation is to click the Home button but don't remove your finger from the button (i.e., leave your finger lightly on the button immediately after clicking it).

I suggest that you run software update, after which you should have Safari 6.0.5 - then check Safari - Preferences - Privacy & see that 'Block cookies' is not set to Always.
Failing that - switch Safari extensions Off via Safari - Preferences - Extensions & test again

HT204406 Uploaded CD last night. I see it in itunes match. However can only download some of the songs. Few have the Icon to download from Itunes Match, however it is not able to be clicked on. It's a lighter icon then other download ones.

The other 4 have an Icon to download from Itunes Match, however it is not able to be clicked on. // See Pearl Jam Ten. I can download almost half the songs. The others remaining I cannot though they say they are available. I've reset the cache, I've closed and reopened Itunes, I have even turned MATCH off and then back on. Nothing is working. Please help. Also the song will not play. If I start the album, it skips over these songs.

The number of Songs that 'matched' is simply a function of the current iTunes Match service process. It is not unusual to have multiple Songs in an otherwise perfectly matched album be uploaded - often it is very possible to find the album in the iTunes Store.
The Artwork does tend to reappear for many over a few days / weeks - however, if your library backup has all Artwork present it would be wise to save the Album Art separately and reapply to Albums not showing art work in the library grid view.
Many of the other performance issues you mention are not typical - though during the past working week or so the Apple Infrastructure has been very heavily loaded with multiples countries having service go-live symultaneously.

I will try am explain what I see: I hooked up my I Pod Clicked on Music checked Sync Music 1909 Songs select Playlist, Artists, albums, and genres checked Include music videos Playlists checked 50's Music checked 70's Music checked 80's Music checked 90's Music checked 2000 Music checked 2010 Music These are songs that I downloaded onto my I Tunes. Correct. When you update via iTunes all synced media that is not in your iTunes library will be lost.

It will be tied to your old account, so only that old account will be able to re-download it - but redownloading an account's past purchases may tie a computer or device to the account for 90 days : http://support.apple.com/kb/HT4627
Do you have a copy of it anywhere e.g. on your computer's iTunes, or on a backup of your library ? If you have it on a backup then you should be prompted to authorise the account (and I think that the id will show) if you try to add it to your computer's iTunes via File > Add To Library.
