If you are trying to change your credit card info and you have cancelled the one card, then you need to add the new card, then make it the default card, and then you can delete the other one. Welcome to the Apple community.
Unfortunately as you have discovered the only output from the Apple TV is via HDMI. I'm not sure what it is that you have purchased to try to resolve the problem but I am not aware of any such thing as an HDMI to RCA cable. Anything that you purchase to try to resolve this situation (whether it fully works or not) would involve a hardware converter and not simply a cable.
There are hardware converters that will convert HDMI to various other types of output, however there are some issues with doing so that you should be aware of.
HDCP
HDCP compliant converters will not allow you to watch HDCP protected content such as HD content from the iTunes Store. Non compliant converters exist but we cannot discuss them under the Terms of Use for these communities.
Resolution and aspect ratio
I'm not aware of any converters that will scale the output from the Apple TV, any TV or projector which is used will need to be widescreen and support resolutions of 720p (Apple TV 2).

Ok, I can kinda understand why Apple is trying to implement these measures, but its going to get into a hole heap of mess in my opinion.
I am going through my third iTunes Music Match configuration due to updates etc and its starting to get a painful exercise.
If I have to go through the whole process again, which we will since Apple is promising the impending library deletions, I not sure I want to bother!
Anyway, to get to the point of the problem, since I travel between the UK and the USA, I have two main Apple ID's.
My iPad2 is giving me the error "This device is already associated with an Apple ID" and informing me that I have to wait 90 days before I can switch.
I have no iCloud music showing up on my device and I am getting this error irrespective of which of my two Apple ID's I put into the settings!?
This seems a rediculous situation to get into, so I have no media available and before I can even try to fix the problem, I have to wait 90 days, really Apple!?!?
Even if I wait 90 days to try switching my Apple ID's, I'm not convinced I will still not get this error again so another 90 day debarcle could mean I'm without my media for half a year!!!!!

Yes, the phone will still be connected to your Verizon account. In order to remove it from your Verizon account, you will either need to activate another phone on that number or disconnect the number.

The issue is that your credit or debit card credentials must be associated with the same country where you reside.
"Although you can browse the iTunes Store in any country without being signed in, you can only purchase content from the iTunes Store for your own country. This is enforced via the billing address associated with your credit card or other payment method that you use with the iTunes Store, rather than your actual geographic location."

It's referring to your credit card, the one associated with your Apple ID in the iTunes Store. The number they want is the rightmost one on the signature strip on the back of the credit card.

Content and Apple IDs -
Content is forever tied to the Apple ID that bought it. Apple does not transfer content from one Apple ID to another. Apple does not merge Apple IDs. You will never be able to access your content bought with one Apple ID with a new Apple ID.

Make a backup of your stuff (from the phone. apps/photos/music/blabla). Update your phone. The phone will restore the backup automatically.

Your verifiable and active apple I'd username, the serial number of a device registered in your name, and some billing info currently associated with your account.
