Unable to figure out how to delete photos, there is no trash can in upper right corner?
Only photos taken with the iPad, copied onto it via the camera connection kit, or saved from emails/websites etc can be deleted directly on the iPad - either via the trashcan icon in the top right corner if viewing the photo in full screen, or via the icon of the box with the arrow coming out of it in thumbnail view.
Photos that were synced from your computer are deleted by moving/removing/de-selecting them from where they were synced from on your computer and then re-syncing.

By "sending" do you mean sending email?
If so, what app are you using to take the photos on your iPhone 5? Or are the photos from a different source (saved to your Camera Roll from somewhere else, like a web page or Messages)?
My guess is that Mail gives you the option to send different file sizes when it detects you are trying to Mail a really large photo file. The size of photos on the iPhone 5 is really big and some email providers may stop your mail from being delivered if attachments are too large. Thus, Mail tries to help you by offering to resize the photo.
I suspect that if you are sending smaller files, Mail does not bother giving you options to save a smaller version. In fact, I have seen this behavior. So, if the photo is already "small enough", it gets sent as-is.
To my knowledge, there is no global iOS setting for this. Some apps may have different rules, of course. -

I have an iPad 2 with most recent update 8.1.3. I have been experiencing connection problems, wifi dropping all the time. I get the prompts to enter passwords for iCloud and i Tunes all the time. I finally synched my Apple ID with my iTunes ID but the iCloud is still connected to an old email. I cannot figure out how to delete it as iCloud is not accepting the password I am using. I go round and round with changing passwords, etc. What am I doing wrong? How can I sync everything?

This may be related to a new feature embedded in iOS7 that shows all purchased music by default. Go to Settings > Music, then turn off Show All Music. See if the issue ceases once the feature has been disabled. This information is located on page 63 of the user guide below.

Can't figure out how to delete addresses that autofill in the Mail To field
Can't figure out how to delete addresses from the address book that will automatically fill in an address after typing a few letters of a name. Quite a few people have changed their email address but I sometimes inadvertenly choose an old address just because I can't delete it.

Milli.Assuming you're using Apple Mail, you take those old addresses out of the Previous Recipients list. When in Mail, go to the Window menu, then Previous Recipients. Edit this list, it's everyone you've sent mail to, not just address book people.
Alternatively, when composing a mail message and seeing those old addresses, you should be able to click & hold over the name and a list of actions should appear, including "remove from previous recipients list" if they are not in your address book. -

Assuming that this is on your iOS device, then you can change a contact's details via the Contacts app. If it's not linked to one of your contacts then I get a blue 'i' to the right of the email address on the popup list :

Under Network Preferences, select the WiFi
click on "Advanced..." button
Select the network you want to delete from the list and click on "-"
Click "Ok"

You may also want to delete the wireless key from Keychain.
Open Keychain, seach for the old wifi network name, slect it and click delete -

New mac user with new iphone 5 unable to figure out how to synch my itunes to new phone.
Have you checked all of the tabs on the iPhone profile? Do you have all of your sync options set up as you want them on each tab on the profile? (by Profile, I mean the screen that displays with the various tabs when you connect your phone to the Mac).

I have Maveriks. I downloaded numerous ACID Fonts and purchased Stuffit as instructed by ACID Fonts in order to use them. However, now I am unable to figure out how to get them into my Font Family drop down list or insert into Pages. PLS HELP!

I am new to Lightroom and have also just changed from Apple to PC. I cannot figure out how to download photos from the Photoshop library to a file that will be sent to MPIX for processing. Also, does Lightroom have an easy access to a photo processing capability such as MPIX?
Use the trackpad to scroll, thats what it was designed for. The scroll bars automatically disappear when not being used and will appear if you scroll up or down using the trackpad.
This is a user-to-user forum and most people will post on here if they have problems. You very rarely get people posting to say there update went smooth. The fact is the vast majority of Mountain Lion users will not be experiencing any major problems with the OS, or maybe with apps which are not compatible, but thats hardly Apple's fault if developers don't update their apps. -

How to get deleted photos back in the trash can?
I tried to dele all the photos I've deleted from iPhoto by cmd+delete all the photos in the iPhoto trash can, but that only made all the photos reappear in iPhoto.

IdaThere's no way to do that. If you try and trash thousands of photos at one go you'll trash the Library - which is what sounds like you've done.
Download iPhoto Library Manager and use its rebuild function. This will create a new library based on data in the albumdata.xml file. Not everything will be brought over - no slideshows, books or calendars, for instance - but it should get all your albums and keywords back.
Because this process creates an entirely new library and leaves your old one untouched, it is non-destructive, and if you're not happy with the results you can simply return to your old one.
