Whilst updating my boyfriends phone after backing up to iTunes it accidentally got disconnected. when reconnected it synced all contacts from my phone back instead. can this be reversed and his data retrieved ?

Your only choice at this point is to restore your iphone. Since it appears from your post that you have never synced to this computer, you of course will not have a backup to restore from. That means your only choice is to restore as a new device & re-sync your itunes content. Unfortunately, all of your contacts, calendars, pics in your camera roll, etc., will be lost. Its not a good idea to use the iphone or any phone for that matter as a storage device, as things like this can & do happen. You should be syncing on a regular basis. The first thing done when you do sync is an iphone backup. You should also transfer pics in your camera roll to a supported application on your computer on a regular basis, much like any digital camera. You can always sync pics back to your phone, but if the only copies are on the phone, you run the risk of losing them.
See if you can force the phone into recovery mode:
Leave the USB cable connected to your computer, but NOT your phone, itunes running, press & hold the home button while connecting the USB cable to your dock connector, continue holding the home button until you see “Connect to iTunes” on the screen. You may now release the home button. iTunes should now display that it has detected your phone in recovery mode, if not quit and reopen iTunes. If you still don’t see the recovery message repeat these steps again. iTunes will give you the option to restore from a backup or set up as new.

It's a good idea to backup your Mac Address Book application and iCal Calendars application from each application. This way you can go back and pull out items if you lose something. I do this everyday.

The fact that those internal contacts lists aren't editable is an irritation to many. I've submitted feedback to Apple several times on this, asking that in a future OS release they should either
Provide a way to directly access that list of 'Recent Addressees' and Delete unwanted ones, or
If not that, then at least mode it so that addressses selected from that list bubble up to the top, therefore over time moving the unused ones down out of sight.
Other have added their own ideas, and the more they hear on this topic the more likely a future fix will become. If you feel that you would like the change, then put together your best case for it and make your wishes known directly to apple via their established Feedback links:

Now I understand. In step #2 above "set up your mac to sync its contacts with that icloud account" means "select all the 'on my mac' contacts and drag them onto the iCloud account so that they become iCloud contacts". There is no "setting" to sync "on my mac" contacts to iCloud.
As I tried to note on another thread about this where I was, unfortunately, openly mocked for having difficulty with it, this doesn't always go as smoothly as one would like and it can, at times, appear that you can't drag a contact from "on my mac" to iCloud.
I have several hundred google contacts and several hundred "on my mac" contacts, as well as the iCloud acount. (A consequence of being a very long time Apple user and a very reluctant iCloud adopter. Until a serious phone failure yesterday I'd always just had the contacts sync via iTunes and then grandfathered from phone to phone once that feature was removed by building the new phone from the old phone's back up.)
The Contacts app is in constant network communication with the google servers and the iCloud servers. When you're working with this many contacts at one time, network lag in those communications (is my best guess) can cause the application itself to cease to function in a quick and obvious way, often creating the appearance that you can't drag a particular contact (or group of contacts) from one place to another. You try to drag and nothing happens. You don't get an error or a warning, you don't get the situation where you can drag it but you can't get it to select a group (because the contact is already in there) you get nothing at all.
If this happens often enough it can lead one to believe that contacts must be moved individually and manually, but that is not the case. You just have to let your network connection catch up, and try again.
Also note that if you drag a group of contacts and some of them are already in iCloud you'll get a warning about potential duplicates. You'll get a set of choices about which one to keep, or both, or update. You can't actually see the contents of the two duplicates while you make this choice. If you get this warning, I would highly recommend choosing "cancel", confirming that your local copy is correct, complete and up to date, and then do the select and drag again and then pick the "update" option -- either nothing will happen because iCloud was also correct, complete and up to date, or you'll update iCloud, but nothing bad can happen that way.
I'm so glad they took away the direct syncing with the Contacts app via iTunes. This new method is so much easier to use -

You cannot -- it is one at a time, by design. Further, it's not the best place to put your data...anything beyond name and phone number will be lost. Any contact with multiple phone numbers will wind up with multiple entries. Depending on what your true goal is, there is most likely a much better way to accomplish what you need.

Itunes sync erased ALL contacts from my phone and address book empty
So I must have chose something wrong when I ran a sync and it erased my address book from my iPhone.
What do I need to check or change before my next sync to make SURE all my address I re-entered on my iPhone are synced with address book on mac instead of mac overwriting my phone and wiping them all out again?

Does Outlook also backup all contacts with just phone numbers?
Obviously not every contact is going to have an email, but for some reason in outlook I can only pull up the ones with emails.

Contacts on your iPhone are included with your iPhone's backup, which is updated by iTunes as the first step during the sync process. There is no other backup function available for iPhone contacts.
Contacts are designed to be synced with a supported application on your computer. With Windoze, this can be with Outlook 2003 or 2007 along with syncing calendar events, or with Windows Contacts for syncing contacts only. -
My husband and I use the same apple ID. I started using a new iPhone and deleted his contacts from my phone which has also deleted them from his phone. He hasn't backed up his phone but my iPad is backed to iCloud. Can I retrieve the contacts from this?
In preferences turn on iTunes sharing in iTunes preferences and keep iTunes turned on in both accounts. Or better yet put the iTunes library on the main HD rather than in an account and set the location of the library to that location in iTunes preferences.

Deleted contacts from my phone & they auto deleted from other phone. How do I get them back?
Just updated my iPhone 4 and my GF's iPhone 4 to the new OS, we share the same Apple ID and subsequently linked both phones to the same iCloud account (I will be using separate clouds from this point forward). However, after the update all of her contacts where in my phone so I deleted all of them and due to the cloud they all deleted from her phone.
So, I have previously backed up (not just synched) her phone to iTunes but I was hoping for clarification on exactly to restore her phone from iTunes and recover all of her contacts. the same problem happened to me also, i felt that while playing hay day, if some calls came in between and if i answered the call, the setting of all the icloud items turns off. (i have backup of all the items on icloud), after deleting the account and making settings of mail, contact, calander etc on on mode and after rebooting the phone, it again download from icloud server. but it is just a headache. do not know how to handle this.
