Help- erased my iPhone through Find my iPhone (as it was stolen) but now I can't see how to restore to my new phone!

My iPhone 4 was recently stolen, so I erased it via the Find my iPhone app.  I'm planning to get a new one and will want to restore it so it has all the data and setting from my old phone, but when I log into iTunes my old device isn't showing in the device list.  If it's not showing in the device list how can I restore the content to my new phone?

Thanks for your very helpful reply.  It's just what I needed after the stress and upset of having my phone and indeed my entire handbag stolen.  I was under the impression that this was a forum to get help, but with people like you around apparently not!

Why would it?  Devices only appear in the list when they are connected to iTunes either physically via a cable or via Wi-Fi.

Read the User's Guide before asking any more silly questions.  Not trying to be rude but you come across as clueless.  The User's Guide covers basic functionality.
I have read the guide, it doesn't answer my question.  Perhaps if you read the guide yourself you would be aware of that!
