You don't.
Go to http://iforgot.apple.com
You can re-set the password, or, if you can't remember the ID at all, you can use the forgot my Apple ID link there to try and recover it.

You don't. You can't get past the activation lock without the ID/password used to lock it. If "the guy" says he doesn't remember, what the probably actually means it, "it's stolen".

That's the entire point of the update. To prevent unauthorized activation of an iPhone. To discourage Theft.
If there was a way around it, it would defeat its purpose.
The only way to get past that is to contact the original owner and ask that they remove the lock with their Apple ID. -

I have never had a passcode to lock my iPad. Now that I have updated it with IOS7 it is asking for one and is locked. How do I unlock this without having to reset the whole thing through iTunes????
Unfortunately, if the iPad is insisting that you use a passcode, there is no way around it other than to restore the device using iTunes on a computer, or by erasing it in iCloud.com via Find My iPhone.
You could try resetting the iPad and cross your fingers and hope this is just a blip on the radar....hold down on the sleep and home buttons at the same time for about 10 seconds until the Apple logo appears on the screen. -

You can't. You will have to place the iPod in Recovery Mode and then connect to your computer and restore via iTunes. The iPod will be erased.

You need to do it through Verizon. Only the carrier the device is locked to can authorize the unlock on the phone. If the GSM side is unlocked, then yes you can use it with a foreign carrier. However, if my memory serves me correctly, the GSM side of the iPhone 5 for Verizon is already unlocked. Try it with a foreign SIM.
