After backing up my new iPhone with content from my old iPhone, all of my new content (photos, voice memos, etc) was deleted. How do I retreive this?
If you just bought the iPhone today, the first time you connect a new iPhone or iOS device to iTunes the first time that is used to sync with another iOS device, you are prompted to transfer the backup for the other iOS device to the new iOS device, or set up the new device as a new device.
Sounds like you did the former and if so, this did not include backing up the new iPhone first. All data on the iPhone was replaced with the backup for the iPod Touch. The data that was on the iPhone at that time is gone.

If you have been regularly syncing/backing up your iPhone with iTunes or iCloud, you may try restoring it from the last backup.

How do I get content from my old iPod Touch to my new iPhone 5? My iPod Touch is too old to use iCloud. I have activated the phone but am stick at the point of the set-up where my 3 choices are:
1. Set up as new phone
2. Restore from icloud Backup
3. Restore from iTunes Backup
thanks!If your iPod touch music is in your iTunes library, you just need to sync the new iPod nano with iTunes, the songs will be transfer to your new iPod. Restoring or erasing all content and settings will just turn the feature of iCloud off and not deleting from iCloud. If you want to, turn off iCloud before you go through with erasing it.

Only way to get it back is to restore your phone from a backup, if those pics were included in that backup.
But most likely those pics are gone.
What you should've done was import http://support.apple.com/kb/HT4083 the pics to your computer and after you restored from your old backup, you could sync those new pics to your phone via itunes. -

Am I able to set up as a new iPhone and then update the new phone to IOS 8.1.3 and then restore from my old iPhone 5 back up at that stage?
Setup your new phone, then update to iOS 8.1.3. Once done: Settings>General>Reset>Erase All Content & Settings". At the setup screen you'll now be able to select your old phone's backup.
