First, make sure you're logged into the iTunes Store using the account ID and password you set up, or used, when you redeemed your card/gift. If you are, try signing out of the account and back in.
If you're sure you are using the correct account and that you're signing in to the iTunes Store, and signing out and back in doesn't help, go to the Purchase History and review your purchases to make sure that you should indeed have a balance left. iTunes doesn't always refresh the balance it shows, so it's possible you spent the money and it just wasn't being reflected in the display. This display error can usually be corrected by logging out of the iTunes Store and then back in.
If you confirm that you should have balance left but the iTunes Store isn't showing it correctly, send a message to the iTunes Store customer service department through the contact form you'll find by selecting the most applicable section of their Support page (select the Contact Support link and follow the instructions) and explain the problem to them.

Getting an error that the iMessage cannot be initialized - why now, I have been using it for the last 3 years?

I cannot send iMessages anymore (have been able to do so for the last 3 years) and when I go Settings / Messages / the iMessage is OFF so when I turn it on it returns an error saying that iMessage cannot be initialized and that I should sign on with my Apple ID, which I did, but it still gives me the error.
Why is this happening and what can be done?

It won't be anything to do with Acrobat.
It may well be something with whatever created the PDF, the settings in whatever made the PDF, etc.
Does this happen with every PDF that you do not recreate by printing to PDF (I presume from Acrobat)?
If this is limited to particular PDFs from a particular application and the creator of the PDF is not an Adobe product, what created them?
If it is just some PDFs, can you upload one to dropbox.com and provide a link to it?

You might want to check your household contents insurance as well, as this might cover accidental damage, even if the credit cards don't.
Also, if there were purchased items on the iPod, many policies now cover downloaded content as well (up to a limit of course).

Well no, not from my experience. Last night, with a balance of about $42 in the iTunes store (several gift cards this summer) I purchased a 4.99 app - credit card was charged, not the balance in the iTunes store.

You should be able to. As long as you are signed in to the same AppleID that has an available balance. The services are linked.

The second link in ingo's response is key. If you husband syncs his device on the same computer, whether under the same apple I'd or not, you can share music( each pick their own based on what they want to carry around) and pictures, and apps.
Updating apps can get tricky, as they will only update to the original apple id that bought them. But music is fine.
You may need to authorize the new computer if he will be using a seperate apple id. And make sure you don't just sync everything, or one device or the other will get wiped. If you want to sync only music, they'll that to I tunes in the tab setting for that device.
