When copying one of my old cassettes to a CD how do I get the data - album name, artist, etc. to show up when the CD is inserted into a player?

To what format file are you saving from Audacity? Although technically AIFF format can save data tags within the file itself I have not found this to always work with all applications. Likely the information you enter into Audacity is just being saved in the file name. When you add this file to iTunes, if iTunes cannot find tags it recognizes it will simply add the track with the file name as the track name. You need to add the tracks to iTunes, then enter the information using File > Get Info for a track or series of tracks,
Some of the above information may vary slightly depending upon the file format being used.
It helps when asking questions here to provide as much information at the onset as possible. We didn't know until this stage that all these menus were in fact part of Audacity and not iTunes.

If you do, you can restore from backup. Otherwise it's gone.

I have 5.0 on WIN XP, but the format is the old 3.6 version. How do I get the new format as in 4.0?

Restore them to the new computer using the bakcup of the old one. If you don't have a backup of the old computer, you can re-download music purchased from the iTunes store. If they were imported from CD's, etc. You will either have to re-rip them or purchase third party software to extract them from the phone. The iPhone is not a backup or data transfer device.

If you don't have a backup then the only possible solution is to go back to the store and see if they can get your old phone and create a backup of that. I know very often that Apple employees will wipe the returned iPhones clean before shipping them back to wherever they ship them.
When you say your old phone was "broken" does this mean it is dead and won't turn on?
Do you have a Time Machine backup of your computer, or a clone that might have this info on it?
Other than that I hate to say you may be out of luck. Time Machine and/or a cloning program performed regularily will inevitably save your a** in situations like this.

To change the iCloud ID you have to go to Settings>iCloud, tap Delete Account, provide the password for the old ID when prompted to turn off Find My iPhone (if you're using iOS 7), then sign back in with the ID you wish to use. If you don't know the password for your old ID, or if it isn't accepted, go to https//appleid.apple.com, click Manage my Apple ID and sign in with your current iCloud ID. Tap edit next to the primary email account, tap Edit, change it back to your old email address and save the change. Then edit the name of the account to change it back to your old email address. You can now use your current password to turn off Find My iPhone on your device, even though it prompts you for the password for your old account ID. Then go to Settings>iCloud, tap Delete Account and choose Delete from My iDevice when prompted (your iCloud data will still be in iCloud). open iBooks, then go to the Store, down at the bottom there should be an Account button. click on that button, you should then be able to log out of the old account and then login on the new account.

My suggestion to use the smart playlist was more along the lines of making one list with rules to show everything in your library as long as it was kind "mpeg" (= mp3).
Smart playlists cannot be edited manually, only by changing the rules. You can use them as the basis for another smart playlist though.
There is added overhead to using smart playlists, so don't go overboard.

The only thing I did was I went to the Apple.com , logged in and changed my primary e-mail since I will be losing the old email soon ( I have a different job). I said update info and verified the email was correct. I just went to settings on icloud and logged out and tried to log in and now it won't take anything. I don't even know now which e-mail they want the primary one or recovery, it won't take any of the 3. Not sure what else to try at this point, I guess I can't buy any more music.
