I am not able to download apps on my iPad any longer. I get a message that says when I log into iTunes I will be able to download the app but there is nothing to download. This just started happening, I never had this problem before.

If you are trying to download large apps over 3G on your iPad then there is 20 meg limit. In terms of iTunes on your computer try either Store > Check For Available Downloads or just (re-)download it from the store : http://support.apple.com/kb/HT2519 and then sync it to your iPad.

Restore from previous backup, be sure use the same iTunes and account you used to store your stuff into your device.

Presuming they're on your computer, right click on them and then follow the prompts to locate hte file on your computer.

Whn you install a new version by default the old version is removed

I was trying to do a favor for my gf, and I accidentily on purpose uninstalled bonjour. It has seemed to really screw up iTunes for me. What are my next steps to get this back to normal? If nothing helps, you need to contact Verizon for information for an exchange or refund. This is a user to user forum, not Apple.
Apple's policy for a refund or exchange is within 14 days of purchase. Verizon's policy may be different.
Definitely try restoring .. hopefully you won't have to go through the hassle of an exchange.

It's a straightforward port-forwarding issue.

Welcome to the Apple Support Communities. If you are unable to install the software update, you may need to plug the iPad Mini into a power source. If it is below a certain percentage in power it will require power to ensure that iPad Mini does not loose power when installing. Check the outgoing mail server setting. Make sure that your username and password are in there.
Settings>Mail, Contacts, Calendars>Your email account>Account>Outgoing mail server - tap the server name next to SMTP and check in the primary server and make sure your username and password are entered and correct - even if it says that the password is optional.

When I log into iTunes in the top left corner to the left of my Apple ID it shows a credit of 26.47 which I do have. Why is it not letting me use it?

When I go into "music" to purchase a song a "pop up" comes up asking me to verify my payment information. When I click on that it's asking me for payment information even though I have a $26.47 credit on my account. Even if you put a credit or debit card on file with iTunes it will still use your balance FIRST.
I would suggest putting a card on file and testing to see if it will allow you to make a purchase, then removing the card from the account after successful download of an item.
