iTunes is not used to move photos and videos from an iPhone to a computer (it is used to move them the other direction).
Also note that a connected phone or camera does not show in the Finder on a Mac. It should show in Image Capture or iPhoto.

I HATE iTunes and thusly removed it from my MBP a long time ago. It is the worst program on the planet for transferring media. So, I have an iPhone 5s and a MBP running 10.9. I have recorded many GBs of video on my iPhone and it just sits on my phone because it is too large to email, and too large to send via iMessage to myself or to my Lady who also has Apple products.
WITHOUT using iTunes, how does one get the videos off their iPhones? I do not care what format it comes off as because I can use programs like Hand Brake to reformat it. I just need them off my phone so I can put them on CDs to share with friends and family. All my Macs and all my IOS equipment is on the same network although my MBP does not even see the iPhone in Finder. Not even when the iPhone and MBP are physically connected with a cord via USB.

Well, no. It's because that the iPod 4th Gen has iOS 6 and the apps need iOS 7. I suggest that you get the new iPod 5 because it has iOS 7. Also the iPod 4 does not have enough CPU or RAM. The new iPod 5 has enough CPU and RAM to store iOS 7 apps.

After updating my iPhone 4 to IOS 7, I get the message to "Turn off Find My iPhone" but I can't get to that option on my phone. Any suggestions

I updated my wife's iPhone 4 to IOS 7. While trying to setup the new installation, I get the message " Find My iPhone must be turned off before Phone can be restored. Go to iCloud Setting on your iPhone and turn off Find My iPhone before restoring your iPhone". The problem is that that option is not available on the phone at this stage of the set up.
Any suggestions?

I saved it anyway and when I go to the Exchange email account it says "Cannot Get Mail" "The connection to the server failed." We are running Microsoft Exchange 2010 and I was always able to sync my calendar and email before I upgraded to IOS 6.

I would recommend getting VLC (http://www.videolan.org/vlc/), which will play almost every file out there, without additional codecs. Will play DVDs, CDs, VCDs etc, along with all the popular video formats. Plays files well from NAS drives also. I use this on every PC and MAC I use currently. Even plays DVD folders from ripped DVDs.

How do I get my entire iTunes library off of my iPhone?

I have an iPhone 4s, and for some reason I have every song in my iTunes library on my phone. I put in my settings on the computer to only sync my playlist, but it still puts on other playlists that I can't delete off my phone.
EDIT: I've noticed that in my playlists section, it has the one playlist I want plus all of the "automatic" playlists or whatever they're called, ones that have a little gear next to them, like "90's Music: or "Top 25 Most Played", and It won't let me delete this playlist from my phone, or iTunes,

I don't think you can control what playlists appear on the phone under iOS 6.0.2 - I noticed it synced every playlist I had created on iTunes.

Sounds like you're in preview mode which hides the pasteboard. With nothing selected, hit the w key.

You can't edit a video out of iTunes.
You would have to edit the video from the original film, either on your computer, or iPhone.

Look at your settings iPhoto>Preferences>Accounts
and make changes here or add your email account if not in the list
One thing to look at for sure is the SMTP sever name, I think by default it fills it in as smtp.me.com or some such, which may not be your email outgoing server.
