How to disable sync

I have this really annoying and recurring problem; I never used mobileme but somehow the 'sync' functionality has been activated, its icon remains in the menubar.
At the most inconvenient moments the d--n thing will attempt to sync and give me (fault)messages, most recently it has been trying to sync my Google address-book with the one on my MacPro.
How can I deactivate this? Thanks.

Open System Preferences > Mobile Me
Select the Sync tab.
Deselect: Sync now (or Synchronize with .mac)
"Sync Now" was greyed out and (I assume?) non-active.
If that didn't help, go to ~/Library/Preferences
Move the com.apple.DotMacSync.plist file from the Preferences folder to the Trash.
I could not find com.apple.DotMacSync.plist in the Preferences. Neither in the user library nor system library.
If you do not want the Sync icon in the status menu bar, deselect: Show status in menu bar in the Sync tab pane.

Currently, as far as I know, disabling syncing for a document library is all or nothing - everyone with access can sync, or nobody can sync.

According to your post, my understanding is that you want to disable sync option in library.
To disable sync option, and keen the open with explore option, we can use the JavaScript to achieve it.

How to disable syncing between .Mac mail and Mail.app?

Howdy everyone,
I'm trying to get my wife's 'new' (aka hand-me-down) 12" PowerBook set up the way she likes it. She uses .Mac Mail, and mostly uses the webmail portion, rather than the Mail.app. Anyway, she's presented me with a question that's stumped me - she wants it set up so that when she deletes a message from .Mac webmail, it stays in her Mail.app Inbox, and vice-versa. I guess you could say that she wants Mail.app to retrieve the messages from .Mac, but doesn't want their mailboxes synced.
Any ideas? I'd fiddled with the settings but can't make it work that way. I have a strong feeling that its right in front of me, but I just can't see it...
Any help would be great!

A .Mac type account with the Mail.app is really an IMAP type account and behaves in the same way.
Personal preference but FYI, webmail access is primarily designed when away from your computer and email client needing to access your email account when using a computer with internet access that is not your own.
For what your wife wants, she needs to access her .Mac account as a POP type account with the Mail.app. You can access a .Mac account as a .Mac, IMAP or POP type account with the Mail.app and as an IMAP or POP type account with other email clients.
This will require deleting and recreating the account in Mail selecting POP as the account type when the account is recreated.
All messages that remain on the server will not be affected by this but any messages sent by the account with the Mail.app that are not stored on the server will be deleted when deleting the account in Mail.
If there are any messages in the account's Sent mailbox that need to be saved, transfer all messages from the account's Sent mailbox to a user created "On My Mac" location mailbox before deleting and re-creating the account.
After re-creating the account in Mail as a POP type account, go to Mail > Preferences > Accounts and under the Advanced tab for the account preferences is a setting for removing messages from the server when downloaded. This should not be selected so no messages will be removed/deleted from the server when downloaded by Mail.
Deleting a message from the server via webmail access for the account will have no effect on messages already downloaded from the server by Mail.

How to disable Sync Apps without removing them?

i am choosing not to sync my apps, but i still want to sync every other things like address book, music, movies, etc... but whenever i uncheck the sync apps box and Apply, it will warn me that all the apps in my iphone will be removed.

No, and what are you expecting or wanting to gain by no longer having Sync Apps selected under the Apps tab for your iPhone sync preferences?
This is no different from deselecting Sync Music, Sync Movies, or Sync Photos after being selected. Doing so removes the content from your iPhone with the next sync.
Leaving sync apps selected serves a couple of purposes. You can remove an app from your iPhone by deselecting the app under the Apps tab followed by a sync. To re-install the app later, reselect the app under the Apps tab followed by a sync. This also provides for an app downloaded/installed with your iPhone being copied to your iTunes library with the next sync after doing so.
There is no solution since there is nothing to solve. This is by design and intended.

If you are using iTunes to facilitate the sync of your contacts, then head to the info tab in iTunes when your iPhone is plugged in and uncheck the box for contact syncing. If you are using a push service then all you would need to do is locate in Settings > Mail, Contacts, Calendars or if you are using iCloud the Settings > iCloud and turn off any contact syncing.

Is this in reference to your contacts list? If so you can perform the following:
Click the Contacts icon(to the right of the Apps arrow) at the bottom of the screen from the Home panel or any panel.
Click the Menu button once the Contacts screen appears and click Hide/Show.
Select the Facebook option to hide contacts.
You may also do this for other contacts that have been synced from email accounts.

The same way you would sync with any other version of iTunes.
Connect the device.
Select the device.
Select Sync.
In the new version of iTunes, the sidebar is disabled by default. With a device connected, it will be listed in the upper right hand corner.
If you want the side bar back, type Cntrl + S.

How do I sync iTunes playlists on my iPhone with iTunes Match?

My experience with iTunes Match so far has been mixed. On one hand, the face of iTunes on one computer to the next is virtually identical, and the streming over the wi-fi from the laptop at work to my home computer is perfect. At the same time, iTunes Match on my iPhone seems terrible. Playlists don't sync and are deleted from my iPhone. Songs that are already on my phone, for some reason, still make my phone spin and drain my battery life. With iTunes Match enabled on an iOS device direct syncing with iTunes via USB or Wi Fi is disabled. To sync in the traditional way iTM must be disabled on the iOS device. At this time is it either/or.

do you want to prevent your ipad from syncing when your are going to plug it in into ANOTHER computer?

Syncing to a new iTunes library or computer will erase your phone. Only if you back up your phone manually before syncing, you can restore your device from that backup again. A manual backup does not include the sync process.
Do this:
Disable autosync in iTunes, connect your phone to your new computer and right click on it in the device list and choose backup. iTunes will backup your device without syncing.
Transfer your purchases the same way, choosing "transfer purchases" this time.
When you connect your phone for the first time, all media content will be erased. But you can restore your settings and app data from your manual backup afterwards.
Don't forget to set up at least one contact and event on your new computer to be able to merge calendars and contacts when you sync the iPhone for the first time.
Music is one way only, from the computer to your device, unless you bought the songs in iTunes and transferred your purchases.

You cannot selectively lock the address book app. If all contacts are sync'd online you can delete the account. However, the all around better approach would be to backup the device and do a security wipe before loaning it.
