How to revert to older version of iTunes

I'm always apprehensive of updating iTunes to newer versions.
Just bought an iPhone 5 64GB and I'd like to sync it with music.
My older phone (32 GB 3GS) had complications when I first bought it, so I'd chosen never to update IT or my iTunes since.
The 3GS is still running on an older version (3.1.3 [7E18]) and it's been amazing through my 3 years of use.
The version of iTunes I'm running is 10.3.1 from back in 2011 (I believe) and I'm quite happy with it.
My iPods AND iPhone have given me no problems these past few years.
In order to sync my new phone, I'm expecting that iTunes will require the update.
So... Is there a way to SAVE my current version of iTunes (10.3.1) in case the current one is not to my liking?
I was hoping to save a copy of it to a USB key.
I'd also appreciate instruction on how to revert back to this older version if I need to later.
I'm using a MacBook Pro with Mac OS X Version 10.5.8

You can restore much of the look & feel of the previous version with these shortcuts:
ALT to temporarily display the menu bar
CTRL+B to show or hide the menu bar
CTRL+S to show or hide the sidebar
CTRL+/ to show or hide the status bar (won't hide for me on Win XP)
Click the magnifying glass top right and untick Search Entire Library to restore the old search behaviour
Use View > Hide <Media Kind> in the cloud or Edit > Preferences > Store and untick Show iTunes in the cloud purchases to hide the cloud items. The second method eliminates the cloud status column (and may let iTunes start up more quickly)
If you don't like having different coloured background & text in the Album view use Edit > Preferences > General and untick Use custom colours for open albums, movies, etc.
If you still feel the need to roll back to iTunes 10.7 first download a copy of the 32 bit installer or 64 bit installer as appropriate, uninstall iTunes and supporting software, i.e. Apple Application Support & Apple Mobile Device Support. Reboot. Restore the pre-upgrade version of your library database as per the diagram below (click on it to enlarge), then install iTunes 10.7.
See iTunes Folder Watch for a tool to scan the media folder and catch up with any changes made since the backup file was created.

    If you've already tried a complete uninstall and reinstall try opening iTunes in safe mode (hold down CTRL+SHIFT) as you start iTunes, then going to Edit > Preferences > Store and turing off Show iTunes in the Cloud purchases. You may find iTunes will now start normally.

    Hey, just wondering if anyone knows the best method of reverting to a previous version of iTunes. I really hate how the new one (7.3) orders the artists by now putting # numbers last not first and anything with 'A' before it, ordered under the next letter (e.g. A Perfect Circle now under 'P' not 'A'). I dont know if I should open the iTunes file and choose 'Remove' it and re install an older version, but just worried about music being wiped from iTunes and having to re add all of it, which has happened and isn't fun. If anyone has anything on that, much appreciated.

    I've got 7.3.2 now and it *****!!
    The whole music stuttering issue is back and it's SLOW! Both in recognizing I've hooked up my iPod as well as with syncing and ejecting it again. Just when they improved that.. grumble!!!
    (sorry to complain in your topic, but this is really really annoying me).
    Anyway, the 2 previous version were running a lot smoother and faster, so I too would like to know how to backtrack.
    Or an even better alternative: I really wish Apple would get their act together and get everything to WORK.

    Ever since I updated Itunes to 10.2.2 it has had loads of problems. The most obvious is when i try to scroll through my library the information from the genius bar gets all jumbled up with it. I hoped to  fix this problem by using time machine to revert to the older version. However when I attempt to do this I get an error saying I dont have sufficient privileges for Itunes. I am the only account on this machine so I should have privileges for everything. Does any one know a solution to this?

    Well. go to http://spr33.co.uk/wp/archives/downgrading-apple-ipod-firmware-102-101 and dolwload the "iPod_24.1.0.1.ipsw" then press the shift button when clicking restore locat the file and then you are downgrading!
    The problem is I could only find 1.0.1! I'm serching for 1.0.2 right now!

    If you have an iBook G4, (PPC) you can't do much.
    But if that is a MacBook (intel) you may be able to
    upgrade the OS X, if the hardware is up to it...
    Since there were about nine different build models
    of MacBook (not powerpc iBook) to identify what
    one you have would be the first step to knowing
    what OS X and RAM upgrades it could use.
    If the computer is not already at OS X 10.6.8,
    it can't go online to get or use OS X 10.7.5. So,
    when you more accurately describe the 'Book,
    detailed information is available.
    When you find the serial number, there is a web
    page that can be used to identify by serial no.

    Requirements for iPhone 5:
    Syncing with iTunes on a Mac or PC requires:
    Mac: OS X v10.6.8 or later
    PC: Windows 7; Windows Vista; or Windows XP Home or Professional with Service Pack 3 or later
    iTunes 10.7 or later
    The highest version of iTunes you can install is 10.6.3 which will not sync with the iPhone 5.

    In the iTunes folder on the G5...
    Delete the file iTunes library.itl.
    Move the iTunes library.xml (or iTunes Music library.xml) to the desktop.
    Start iTunes.
    iTunes menu File > Library > Import playlist and select the iTunes library.xml you moved to the desktop.
    You can then delete the file on the desktop.

    Try following steps and test one at a time:
    1. Restart computer, right mouse click iTunes icon and select "Run As Administrator"
    2. If that does not work, check to see if this file APSDaemon.exe is the problem here.
    Close your iTunes.
    Press Ctrl-Alt-Del key and choose Task Manager. In the "Processes" Tab, select the file APSDaemon.exe and click End Prosses button, then close the task manager window.
    Now open itunes and see if it is working?
    If that works, to prevent having to do the same process everytime you restart Windows, go to. START button, type in
    MSCONFIG
    Hit ENTER
    Click STARTUP Tab, Uncheck "Apple Push", click OK.
    Restart Windows.
    3. If that fails or you don't see ApsDaemon.exe in the Processes, refer to following article to remove SC files:
