The purchase history on your iTunes account will only show purchases from the iTunes stores (iTunes, app store, ibookstore, Mac app store), not from Apple online or bricks-and-mortar stores.
Does anything show on your credit card ? If the email is genuine then it's possible that your and their email addresses are similar and that they gave the wrong id (or the store typed it incorrectly), it doesn't necessarily mean that anybody has access to your account.
For the contact, you will initially just receive an acknowledgement email, the proper reply may take 24 (possibly 48) hours.

A couple things,
First I redeemed a gift card I have and yet it doesn't show in my account. I tried re-entering the code again and ofcourse I was advised the code had already been entered. What do I do?
Also, I entered another of my gift card codes and advised it was redeemed yet when I go to use my gift card credits it takes me to my regular billing information; credit card, etc. How do I get the store to accept payment by my credits instead of my other billing information?

It's been a while but it should work on a Mac because Macs can read Windows formatted devices. Otherwise, you can perform a restore operation to return it to the Mac format. If you go to support.apple.com/manuals/ you can find a copy of the user manual for the model you have in which this is all explained.

Whether you are trying to use a Credit Card or Redeem a Gift Card... My understanding is that you have to be within the US to use the US Store and have a valid US Billing Address.

I know this is not the area to post it, but I couldn't find any place better. I received an Apple gift card today with a message but no name so I don't know who to thank. Sorry but no; there is no online method and no one at Apple could tell you. There are millions of cards sold, from hundreds of vendors, so there's no way Apple could link the card to the purchaser (and even if they could they probably for privacy reasons couldn't tell you).
You'll have to contact your friends and relatives and ask.
