If these files you lost from your iPod Touch are no longer in an accessible iTunes library or backed up somewhere else, I'm afraid you are out of luck. There are expensive data recovery solutions out there, but I'm positive if they will work with an iPod's hard drive.
You should be able to redownload most iTunes purchases via iCloud. For music imported from outside of iTunes such as downloads from another music store, or tracks ripped from CDs, you'll need to either rerip them into iTunes or redownload them from their original source if possible.

- If the photos were synced to the iPod they are gone
- If they were taken by or saved to the iPod gp to iTunes>Preferences>Devices and look at the date/time of the iPod backup. If it is when you synced then restoring from backup should get the photos back.
- If you had turned on Settings>iCloud>PhotoStream, then set up PhotoStream on the computer and get the last 30 days of photos from PhotoStream. You should also be able to get them back by simply turning one Photostream on the restored iPod.

My old computer died, I want to sync my ipod with a new computer but I am worried I will lose all the songs on my ipod.

New compoter has no music on it, my ipod has all my songs, if I sync the two will the computer erase all my ipod tunes and leave me with no tunes?

You definitely need to resurrect the old password associated with the Apple ID you used to purchase the music.

An email will be sent to the email address associated with that account with instructions regarding resetting that Apple ID's password.
If you no longer have access to that email, the resolution to this problem becomes considerably more difficult. In that event you would need to contact iTunes Support and explain your dilemma.

When you say that you lost iTunes do you just mean the program or your content ? Have you checked to see if the content is still on your computer but not in iTunes ?
If not then do you not have a backup of your purchases on, for example, external drives or CDs or DVDs ? If you have then you can copy that onto your computer and add it back into iTunes. If you havn't then if they are still available in the iTunes store (and content is occasionally removed so you should make/maintain your own backups and not rely on re-downloading) and if you use the same iTunes account as you originally used to purchase them, then you should be able to re-download apps and ibooks, and if you are in the US music and TV shows, for free : http://support.apple.com/kb/HT2519 .
