The question of software compatibility is up to the software developer. I looked at their web site but, like too many other developers, they do not make system requirements easy to find. You need to contact them and ask if they support Macintosh and, if so, what levels of the Mac OS are supported.
If it is a Windows-only product (which I suspect it is) you have two options on a Mac:
1) Buy a recent version fo Windows and use Apple's BootCamp technology to partition your drive. Yu can then boot into either the Mac or the Windows OS.
2) Get a Windows emulation program like Parallels or VM FusionWare. You still need a copy of Windows. With these, Windows may b a little slower than in native booting via BootCamp, but you have the advantage of being able to switch between Mac and Windows on the fly, without a restart.

Actually, you can - but it is special order only - they consider it as a customized unit....You might have to wait a week or two.....
You can check the Apple Store at the Mall of the Emirates and see if they have it in stock....
Or, you can go to Apple's website select UAE as the country and configure it with the US keyboard and wait for delivery...

Can I have my ran upgraded at a local Apple Store? Or the only way to buy a Mac Book Pro with 8gb RAM is online?

In Milan, Italy, they did for me at the Apple Store.
They took out the original 4GB and installed 8GB. the 4GB were discounted at full price because I did it before going out of the store. If I remember correctly -200€ for the 4GB and +400€ for the 8GB. This means 200 €
At the end is practical but may be more expensive if you discarge the 4GB and install non Apple 8GB, but this may invalid tha garanty... I am not sure about it but I prefer to stay on the safe side.
The difference could be not much. May be you find 8GB for only 140 - 160 € but it will be difficoult to get more than 40-50 for the 4GB even if they are really new.

Note that those models are completely sealed with no serviceable or upgradeable parts inside. Ok great - Im by no means a professional editor I have done a fair bit of video editing for online, presentation and awards videos in my previous jobs, and was advised by a previous trainer to get a mac and final cut pro as working of PCs and with Sony Vegas was time consuming and inefficient. I am buying a whole new set of equipment for my office and hope to get the department all trained up on it in the next year.
I will be learning to use the software but I will need it to make professional videos in the end so I don't think imovie would be appropriate? Thanks for the advice though - I will be prepared for the learning curve.
Any other advice on which Mac to get also much appreciated.

As dahammer1 says, I think that if you'll want to buy new through a web purchase it's not possible, unless you buy on the Italian Apple Store website, which highly likely means you have to have it shipped to an Italian address and have someone ship it to the US at extra costs and a possibility of custom charges.
I've been in a similar situation. Note that I'm not living in the US but in France and had to buy an MBP with a Dutch keyboard.
What I did was going to my closest Apple Authorized Reseller here in France and have them make a very custom order and send it to Apple. Delivery time was obviously much longer than when ordering via the web.
I'm not sure though this is common policy at all Authorized Resellers or Apple Stores, but you might give it a try.

A PowerPC Mac, if that's what it is, won't be able to see an Intel Mac's formatted data. Also ExFat formatting is not supported by 10.6.3 or earlier. I would try viewing the backup on another Intel Mac with at least 10.6.4. If it isn't there, then the backup never really took place. I much profer a hard drive with Carbon Copy Cloner.

Hi, the last install dvd that came out for mac's was Snow Leopard,10.6.3. Lion is a download from apple. You cannot just install it over Yosemite. You would have to backup your drive to save files you want and do a clean install. You might want to look into getting more memory. This summer, I am traveling to New York, and I would like to buy a Mac Book Pro, and I want western spanish keyboard. I can not stay there for a long time, and I would like to know if in the Fifth Avenue store there is usually stock of Mac Book's Pro with this keyboard. If there is not stock, I would like to know if I could order it by apple online store and ask them to send it to my hotel.
I would also like to know if I can get the free iPod touch, because I am starting my high education, but I am from Spain.

I do not think you can do this. I really doubt they stock the MBP with a Western Spanish keyboard - Apple Stores generally stock only standard configurations. For example, the Boston Apple Store (which is actually the largest Apple Store in North America), does not stock MBPs with the Western Spanish keyboard, or even with the faster processor.
You cannot order online from the US Apple Online Store unless you have a credit card with a US billing address.
