Why?
Apple provides a very simple way to sync and backup the device, simply connect it to iTunes.
In this case, you chose not to do that.
There is nothing that Apple or any other company can do to "force" lazy/ignorant customers to back up their devices regularly.
You would be in the same position if you device had a hardware failure, was lost or stolen.
While it does not resolve the issue, it could have been easily avoided by regularly syncing and backing up the device.
Also, as deggie stated, RSVP by text is not a very smart idea. No carrier guarantees delivery of SMS messages, they are considered extremely low priority.

my iphone will not get out of a locked function. The phone at the bottom where you usually slide to unlock in changing in Japanese, and other symbols. As well as I can not see anything or turn the phone on when unplugged. after the screen has done the Japanese thing it acts like it needs to be plugged into computer to download itunes and states that it needs itunes to be restored. Try forcing a reboot on your iPhone. Hold down the Home button and Sleep button simultaneously for about ten seconds. Ignore anything the phone does and do not release until the screen goes dark and you see the Apple symbol. If your iPhone still wants to connect to iTunes, do so and see what happens. If there is still a problem, click Restore on your iPhone's summary page in iTunes. First restore from backup to try and preserve your content, but if this fails, you may have to restore your iPhone as new and manually set it up again. Good luck!

No, it's not normal.
Basic troubleshooting from the User's Guide is reset, restart, restore (first from backup then as new).
Frankly though, considering it's new, take it back to Apple.

To your 1st post: How can I restore the phone to I tunes?
Plug it into iTunes. If you have already done so before, it should have a latest backup. If possible, it will do a backup of your iPhone automatically. You will see the syncing circle. Once that stops, You can perform a restore.
(Make sure you have a recent backup by going to Edit - Preferences - Devices tab and look for the timestamp of backup)
Perform the restore by selecting your device in iTunes, and selecting restore and restore from backup.
To your 2nd post: Can I just leave it plugged in or remove it?
Depending on where you're plugged into. If you're plugged into iTunes and restoring your phone. It will be about a 30min-2hr process depending on how much stuff you have.
If you're plugged into a power source you should wait till it's fully charged before removing it.
