If it iwas registered to your account then you should be able to get it from your support profile : https://supportprofile.apple.com/
If not then do you have a backup of the iPad on your computer's iTunes ? If you do then in iTunes go into Edit > Preferences (iTunes > Preferences if using a Mac) and on the Devices tab on that hover your mouse pointer over the iPad's backup : http://support.apple.com/kb/HT4061

Usually the serial number was placed at the bottom of the unit.
There is a label which collects all these useful informations.
You have certainly received many documents with you notebook; i.e. warranty.
Check it and maybe you will find the serial number somewhere in the list

You will have to restore your ipod or put it into recovery mode. Either way you will lose everything that you have failed to store on your computer.

I went on a skiing trip to Boston a few weeks ago (I'm from the UK, hehehe) and on the last day my iPod Touch, along with 4 others in my year, went missing from all of our hotel rooms. Did you register the iPod with Apple when you purchased/activated it? If so, Apple will have the serial number in the system. They may not be willing to release that information to you without really solid proof that you are who you say you are. But they will with the police.

There is a FindMyiPhone program/app associated with MobileMe that, if setup, would allow you to send these requests to the iPad. If this was not setup and the OP did not have a passcode setup on the device, the they would need to follow Allan Samson's advice. If the OP did financial transactions on the iPad, they should probably treat it like they would a stolen billfolder or purse.

Unless "Find My iDevice" was enabled on the device prior to it being lost, there is no way to track it.

The only to potentially find is if you can do so via Find My iPhone - which will only work if it's connected to a network and the device hasn't already been wiped and/or Find My iPad disabled on it.
If you haven't already done so then you should report it to the police. You should also change your iTunes account password, your email account passwords, and any passwords that you'd stored on websites/emails/notes etc, and if it's a cellular model then contact your carrier.
In terms of the serial number, if you have a backup of the iPad on your computer's iTunes then you should be able to go into Edit > Preferences (iTunes > Preferences if on a Mac), select the Devices tab on that, and then hover your mouse pointer of the iPad's backup : http://support.apple.com/kb/HT4061
