HT4972 how do I update from iOS 4.1 on my iPod to iOS 5? Advice is unclear/incomplete. I tried erasing & restoring in iTunes, but ended up with iOS 4 again!

How do I update my iPod touch (4) from iOS 4 to iOS 5? I tried the advice on the support page, erasing etc, but ended up with iOS 4 again!?

    FORCE IPAD INTO RECOVERY MODE
    1. Turn off iPad
    2. Turn on computer and launch iTunes (make sure you have the latest version of iTune)
    3. Plug USB cable into computer's USB port
    4. Hold Home button down and plug the other end of cable into docking port.
    DO NOT RELEASE BUTTON until you see picture of iTunes and plug
    5. Release Home button.
    ON COMPUTER
    6. iTunes has detected iPad in recovery mode. You must restore this iPad before it can be used with iTunes.
    7. Select "Restore iPad"...
    Note:
    1. Data will be lost if you do not have backup
    2. You must follow step 1 to step 4 VERY CLOSELY.
    3. Repeat the process if necessary.

    If you have an iPad 1, the max iOS is 5.1.1. For newer iPads, the current iOS is 6.1.3. The Settings>General>Software Update only appears if you have iOS 5.0 or higher currently installed.

    If you are currently running an iOS lower than 5.0, connect the iPad to the computer, open iTunes. Then select the iPad under the Devices heading on the left, click on the Summary tab and then click on Check for Update.

    I think you have a 1G (original) iPod touch. These do not have BT.

    Why is your music not on your computer? And backed up?
    You can transfer itunes purchases from the iphone.  Without syncing:  File>Transfer Purchases.

    Go to the Apple menu and select "About This Mac". You will get a window similar to this one -
    You current OS X version number will be shown as I've marked.
