I am unable to update my iPhone 4S software to iOS 6.1. When I try I get an error message and I'm forced to restore my phone to factory settings. Does anyone have a suggestion as to how I can fix this problem?

Are you currently on ios 4? If so that's where the backup comes in. You'll need to restore your backup once the software is updated.

Did you backup your phone before you upgraded? If not, you should only be mad at yourself. You can't avoid Apples warning to backup your phone before you install the update and then be mad at them for losing your data.
If you did back up your phone, then you have nothing to worry about.

Correct, because you need iTunes 10.7, and your iMac is too old to support it.
If your iPhone has iOS 5, you can update it over-the-air by going to Settings > General > Software Update.
But my guess is you don't have iOS 5.
So you'll need a newer computer, or go to an Apple Store and they can help you.

When you select update, verify that it is showing your correct Apple ID, perhaps you have an app that was downloaded with a different ID, all apps are always associated with the ID that first downloaded them.
