I have a Spanish iPod and apple ID and I have moved to Ireland and purchased a gift card and only realized it cant be used how can I change it?

I do not understand you problem. Where your purchased the iPod does not matter.
You can only use the App/iTunes store in the country you are located and your account payment method (billing address for credit card or when your purchased than iTunes gift card) has to be associated with that country.
