I want to be able to see the names of all composers on my iTunes library interface, for all tracks and albums; how do I do that?y

Go to View > View Options, and check the box for "Composer."
This will create a column that displays the Composer field for each track, and will allow searching and sorting on that field.
Depending how carefully your library is tagged, you may find that the field is empty in some cases.  If you wish to update it, right-click the track, Get Info, go to the Info tab and type in the correct information, then OK out.
