I want to create a new itunes account for myself and leave the current one for my wife. Is that possible?

Ok. My wife uses itunes for her work and she has asked me to open my own account without erasing the one we currently have so that our music can be seperate. I have my own pc and sync to my own itunes program but our purchases still download to the same account and the money comes from the same account. Can I open a new account and not lose everything? Thanks!

You can't transfer purchases from one account to another account. Apple doesn't allow it.
You can continue to use your daughter's Apple ID in order to continue to use the apps that you purchased with her ID and you will need to use her ID and password any time that you want to update those apps. What you do want to avoid is having to download any of those purchased apps again on any other devices - if you create a new Apple ID.
If you create a new ID and then you sign into her ID in order to download a previous purchase- you will lock yourself out of the new ID for 90 days and there is nothing that you can do about it. So as long as you do NOT download any past purchases with her ID - you will not lock yourself out of the new ID. So you can keep using the apps that were bought with her ID, you can also update those apps using her ID (you have to sign into her account in Settings>Store) but you can't download past purchases without messing things up with your new ID.
When you download a past purchase with a different ID - you associate that device with the different ID for 90 days. This is one way that Apple hopes to cut down on pirating of apps - friends using other friends IDs in order to download apps without patting for them.

After creating a new login (bought computer used) and deleting the old one the 500gb hard drive only shows up as 320gb.

So I've just purchased a mid 2011 Macbook Pro 13" used via eBay. Was advertised as having 500gb hard drive and 6gb ram. I checked the ram and it was all legit, checked the hd capacity and it was all correct as well. So I made a new login for myself and deleted the previous owner's. Now my hard drive shows up as 320gb. Even in disk utility and terminal.

One more place to look is SYSTEM PROFILER>HARDWARE>SERIAL-ATA. If it says 320, you have a 320GB HDD which I suspect it probably will. They are easy to replace.

Howdy! I have tried to change my Email address with Apple. Since I cannot access my old Email address, they will not let me change my password. Since I cannot recall my old password, they will not allow me to change my Email address. I am in a true Catch 22.

Hi. I am a graduate student with a huge amount of music files for academia. I store the academia music files on my external HD, since it will just take up too much space on my computer. I wanted to create a separate Itunes account just for my external HD music files. How do I go about doing this? I tried to set it up and created a new account, but it automatically synced to my computer Itunes and I ended up deleting all of my personal music, video and reading articles on my personal itunes account.

As a graduate student you will quickly learn the importance of exact terminology. I presume your colleague told you to copy the "iTunes folder". You can't copy just iTunes (well, you can, but it isn't easy). Saying "iTunes" on its own refers to the application itself, not the library.
You do not need to make a new account. This again gets confusing unless you tell us exactly what you did. As I said before, an "iTunes account" is something you log into to make a purchase from the iTunes Store. A "computer account" is a whole new user area on your computer and isn't made on a different hard drive. An "iTunes library" is a collection of files and folders that generate the window you see when you start the iTunes application.
I do not know how you are ending up with two icons on the dock. While it is possible to do that it isn't at all normal unless you somehow are running two copies of iTunes at the same time. That is exceedingly difficult to do and people have unsuccessfully tried and would like to know how you did it.
You can have two independent libraries and there won't be any crosssover from one to the other. I have four on my computer. Use the procedure I outlined earlier to create a second library and to switch between them.
I was a graduate student many years ago and one of the first things I learned to do so I didn't lose years of research was to make multiple backup copies of anything I generated by computer, especially before performing any major changes to the computer such as installing new software or substantial file rearrangement. Syncing an email account to the Mail app on a device shouldn't require you to create a new iTunes account. Is he having a problem adding the email account in the Mail app ? You should be able to add an email account to Mail without it needing to be linked to any iTunes account.
All content that is downloaded from the store is tied to the account that downloaded it. If he wants to now have a proper email address on his iTunes account (which would allow him to get email receipts for any downloads from the store, and if needed password reset emails) then he can update the account by tapping on it in Settings > iTunes & App Store on his device, tap 'view Apple id' on the popup, and he should be able to then tap on the current email address on the account's page and change it. Or he can do it on a computer's iTunes via the Store > View Account menu option and at the top of his account's screen there should be an edit link to the right of the current email address. He can also do it via http://appleid.apple.com
If he does change it then he may need to log out of the account on any iOS devices he has (tap on it in Settings > iTunes & App Store), and possibly on computer's iTunes (Store > Sign Out menu option) and then log back in so as to 'refresh' the account on them

The last thing you want is a second iCloud account. Try logging out and back in in System Preferences. If that doesn't work, I'd get AppleCare on the line.
