You can't downgrad the OS on your iPhone. It's not suported by Apple.
One way to help make the icons stand out a bit more is to use a solid, dark background image.

There is no FaceTime app, if that's what you're looking for.
Check if FaceTime is enabled. Go Settings -> Phone -> FaceTime. Is it On or Off?
You will need to find a contact in your iPhone, tap on it, and you should see 4 boxes in the bottom of the window: Text Message, FaceTime, Share Contact & Add to Favorites. Choose FaceTime, and it should call them via FaceTime. Also, you must be connected to a Wi Fi network in order to use FaceTime
